BIWA Golden Top FrontStreet Coffee Mandheling

Indonesia is a southern paradise composed of many beautiful islands.

One of these islands, called Sumatra, has a Lintong region in its northern part. The beans that are hand-picked and hand-processed from limited farms in this region are called GOLD TOP MANDHELING.

After being hand-picked and hand-processed, the selected beans undergo SEMI-WASHED processing, sun-drying, hulling, followed by a drying process and two rounds of cleaning work and four rounds of HAND-PICKING processes. Therefore, they can be considered as specially selected premium coffee beans.

Selection Process

1. The purchasing company at the origin directly purchases the deep red coffee fruits from farmers.

2. Immediately removes the coffee pulp to extract the PARCHMENT. Then the PARCHMENT is placed in a small water tank for washing. (The purpose is to remove impurities from the PARCHMENT, approximately 1-2 minutes).

3. The washed beans, after sun-drying treatment, are directly transported to the export company in Medan. Then the export company subjects these beans to two days of sun-drying and hulling. Because the moisture content of the processed beans is still as high as 40%, it is necessary to use sun-drying methods to reduce the moisture to 12.5%.

4. The fully dried beans must undergo specific gravity treatment, air volume sorting, and screen sorting to remove SILVER SKIN, small beans, defective beans, and foreign objects. Finally, they undergo HAND-PICKING treatment to achieve the highest grade GOLD TOP MANDHELING.

GOLD TOP MANDHELING

The origin of FrontStreet Coffee's Golden Mandheling is that it was initially developed through contract cooperation with Japanese people who went to Indonesia locally. From tree species selection, cultivation management, harvest processing... all quality control, selection, and processing procedures were planned and managed by the Japanese. Even the storage stacking after bagging had special planning. The process can be said to be extremely rigorous. Therefore, FrontStreet Coffee's Golden Mandheling was created with extremely superior quality and has received quite high evaluation in the coffee industry. Later, because GOLD MANDHELING was registered as a trademark locally in Indonesia, it was changed to "GOLD TOP MANDHELING."

When we roast this bean, we break away from the general method of roasting Mandheling series beans until the second crack is dense and the beans become dark and shiny. Instead, we choose to drop the beans at the end of the first crack to before the second crack. Without the bitter taste, it carries a slight, soft fruit acidity, making the aroma more subtly prominent.
