However, in 1972, Ethiopia introduced Central and South American washing techniques to improve quality. FrontStreet Coffee's natural Yirgacheffe maintains strict standards for collecting red cherries (the fruit of coffee trees). Before sun-drying the coffee cherries, workers manually remove unripe green cherries or defective ones. During the drying process, damaged or moldy cherries are removed again. After two weeks, the sugars and essences from the fruit pulp fully penetrate into the coffee beans as moisture content drops to 12%. The hardened fruit pulp, pectin layer, and parchment are then scraped off together with a hulling machine. The extracted coffee beans undergo density and color testing. After eliminating defective beans, workers finally manually remove any missed defective beans with their naked eyes. This multi-layered screening process creates the exceptional purity of FrontStreet Coffee's natural Yirgacheffe beans, which also possess rich, captivating fruit aromas.
Characteristics

Cultivation

Winter doesn't cause cold damage, cultivating a unique regional flavor of citrus and floral notes.
Flavor Profile
The so-called "Yirgacheffe flavor" refers to rich jasmine floral notes, lemon, as well as peach and almond sweet aromas and tea-like fragrance. The tasting experience can be summed up in one sentence: when coffee enters the mouth, a hundred flowers bloom! Yirgacheffe is divided into two main categories based on green bean processing methods:
Category A is washed processing, with grade standards established by the "Specialty Coffee Association of America" (SCAA), classified as Gr-1, Gr-2, where smaller Arabic numbers indicate higher grades.
