Flavor Profile Introduction to Yunnan's Three Major Coffee Growing Regions: Baoshan, Pu'er, and Lincang - Which Origin Produces the Best Yunnan Small Bean Coffee?

Coffee quality is determined by various factors including its growing environment, climate, and cultivation techniques. Its optimal growing conditions are low latitude, high altitude, abundant rainfall, and moderate sunlight, making the area between the Tropics of Cancer and Capricorn (between 28°N and 38°S latitude) the ideal coffee-growing zone.
In China, some areas of Yunnan, Guangxi, Guangdong, Taiwan, and Hainan have suitable conditions for coffee cultivation, but only Yunnan and Taiwan meet the high-altitude requirements. Premium Yunnan coffee is typically grown at altitudes of 1200-1600m in dry-hot valley regions. Only the temperature differences between day and night created by high altitudes can slow down the maturation process of coffee beans, developing more refined coffee flavors.

Through cupping comparisons, FrontStreet Coffee has discovered that Yunnan coffee beans grown in high-altitude regions typically exhibit soft acidity, with nutty and caramel aromas, full body, and rich, mellow flavor.
Currently, Yunnan arabica coffee cultivation areas are distributed across cities and prefectures including Pu'er, Lincang, Baoshan, Dehong, Nujiang, Xishuangbanna, Dali, and Diqing. Among these, Yunnan arabica coffee beans from Baoshan, Pu'er, and Lincang are the most renowned.
Pu'er City
Pu'er City is divided into nine counties and districts for Yunnan arabica coffee cultivation: Simao, Ning'er, Mojiang, Jinggu, Jingdong, Zhenyuan, Jiangcheng, Lancang, Menglian, and Ximeng. The average annual temperature ranges between 17°C and 20°C, with cultivation altitudes between 700m and 1600m. Through cupping, FrontStreet Coffee has found that high-altitude arabica coffee beans from the Pu'er region display plum-like fruit acidity, nutty-caramel sweetness, and distinct fermented tea aftertaste.

Baoshan City
Baoshan City encompasses five counties and districts—Longyang, Longling, Shidian, Changning, and Tengchong—where coffee is cultivated with the Baoshan arabica coffee geographical indication product designation. Baoshan features a low-latitude mountainous subtropical monsoon climate. Due to its location on a low-latitude plateau with complex topography, it creates a three-dimensional climate where "one mountain experiences four seasons, and ten miles offer different weather."

The annual temperature variation is small while daily temperature variation is large, with an average annual temperature of 14-17°C. Precipitation is abundant with distinct wet and dry seasons, unevenly distributed, with annual rainfall ranging from 700-2100mm. Coffee is cultivated at altitudes between 1000m and 1500m.
Lincang City
Lincang's geographical location is unique, bordering Myanmar to the west. The climate conditions here are exceptionally favorable, featuring significant day-night temperature differences, abundant rainfall, and mild average annual temperatures, with cultivation altitudes of 1000-1600m.

Lincang City has a subtropical low-latitude plateau mountain monsoon climate with complex terrain, creating a region with multiple climate types. Primarily influenced by the Indian Ocean warm-moist air currents and southwest monsoon, the four seasons are not distinctly differentiated, but wet and dry seasons are clearly separated. The area receives abundant rainfall with long sunshine duration—average annual sunshine exceeds 2000 hours. The frost period is short, with some regions being frost-free year-round. The three-dimensional climate is prominent, with mountainous areas having average annual temperatures of 13-15°C.
Recognizing Lincang's potential, FrontStreet Coffee established its own coffee cultivation estate on a mountain at 1300m altitude in this region, planting the most ancient Arabica variety—Typica.

The choice of Typica variety was made because, as one of the oldest coffee varieties, it possesses pure Arabica genetics. Its elegant and clean flavor profile has long been recognized as a specialty coffee variety.

For brewing Yunnan coffee, we recommend using a V60 dripper with a 1:15 coffee-to-water ratio, medium grind (approximately raw sugar size/75% retention rate on China #20 standard sieve), and water temperature of 88-89°C.

Use a three-pour technique to enhance the coffee's complexity: First pour 30g of water and let bloom for 30 seconds; second pour with small circular motions to 125g, wait until the water level drops to half, then continue with small circular pours to 225g. The total extraction time should be approximately 2 minutes and 10 seconds.
