Yirgacheffe Grading System

Kochere Micro-Region

Kochere is located 25 kilometers southeast of Yirgacheffe in Ethiopia, representing a small coffee-producing sub-region. It is one of Yirgacheffe's three famous micro-regions and is a prosperous area where coffee production thrives. With approximately 100,000 local residents, coffee beans serve as the primary source of income. The processing and equipment in this region are highly advanced. The renowned coffee review website Coffee Review awarded Kochere washed beans an impressive score of 94 points.

Brewing Recommendations

For pour-over Yirgacheffe: Use 15g of coffee ground to medium-fine consistency (using a Fujiyama grinder at setting 3.5) with a V60 dripper. Water temperature should be 91-93°C. First, pour 30g of water and let it bloom for 27 seconds. Continue pouring until reaching 105g, then pause and wait until the water level drops to half before continuing. Slowly pour until reaching 225g total, avoiding the final tail section. The water-to-coffee ratio is 1:15, with a total extraction time of 2:00.

While Yirgacheffe shares cultural and geographical similarities with neighboring Sidamo, it appears to be particularly blessed with exceptional conditions. Premium Yirgacheffe coffee features floral notes, bright citrus acidity, lemon characteristics, and a silky, smooth mouthfeel.

Kochere Region Excellence

Kochere is located in southwestern Ethiopia, approximately 25 miles north of the famous Yirgacheffe town. The production model primarily involves local small farmers delivering their harvest batches to cooperatives for unified processing. The local Chalalacktu village has about 100,000 residents who depend on coffee cultivation for their livelihood, with coffee-related activities serving as their main economic source. Due to income from coffee production, the local standard of living is significantly better than many Ethiopian villages, with well-equipped health facilities, higher education institutions, and other infrastructure. Advanced processing equipment has enabled Kochere region's coffee to consistently achieve high performance in washed processing, delivering clean sweetness with complex molasses and citrus notes.
