Yirgacheffe Grading System
Yirgacheffe's grading system is not determined by bean size but rather by the proportion of defective beans in the total green beans. Brewing Recommendations
For pour-over Yirgacheffe: Use 15g of coffee ground to medium-fine consistency (using a Fujiyama grinder at setting 3.5). Brew with a V60 dripper at 91-93°C water temperature. First, pour 30g of water and let it bloom for 27 seconds. Then pour to 105g and pause. Wait until the water level in the coffee bed drops to half before continuing to pour slowly until reaching 225g total. Avoid the final tail section. Use a 1:15 coffee-to-water ratio with a total extraction time of 2:00 minutes.
