The Origin of Panama Coffee

Panama coffee originated in 1780 when European immigrants introduced the first batch of Typica varieties. Located in Central America, it possesses natural advantages including sunshine, fertile land, and high mountains, along with an ample labor force, making this region an excellent area for cultivating and producing high-quality specialty coffee—a true paradise for coffee cultivation. Particularly, Geisha variety coffee from Panama has led the global trend of attention to specialty coffee, successfully attracting worldwide market interest in Panamanian coffee.

Boquete: The Premier Coffee Region

The Boquete region is Panama's oldest and most famous coffee-producing area, situated on the eastern side of Baru Volcano at an average altitude of approximately 1,000-2,000 meters on the plateau. The "Volcan Baru National Park" within this region is an ecological conservation area with extremely rich biodiversity, featuring multiple microclimates. Coupled with year-round mist coverage and abundant rainfall, this creates excellent local cultivation conditions, giving Boquete coffee its unique aroma and making it the region with the highest production and best quality in Panama.

During each harvest season, coffee farmers use the refined washed processing method and sun-drying techniques, ensuring that the green coffee beans are full and pure in flavor.

The Terroir of Baru Volcano

Baru Volcano is not only Panama's highest mountain range—early volcanic activity and eruptions created sedimentary deposits that brought large quantities of extremely fertile soil. This soil is rich in nutrients, with volcanic ash particularly abundant in phosphorus and sulfur. Mixed with clay and combined with unique climate patterns, this region forms an environment suitable for growing high-quality coffee. The dense forests and numerous species create overall biodiversity.

Sustainable Farming Practices

Here, about 50 coffee farmers form a small cooperative, all using traditional Boquete methods to produce coffee—allowing coffee to grow in a near-natural environment. Although production is not high, this approach maintains a rich ecological environment where soil quality can be preserved or even improved. Natural farming methods are not only beneficial for the environment; because coffee cherries grow slowly, they more easily develop high-quality coffee beans with excellent flavor.

Farmers manually harvest complete coffee cherries and send them to the nearby Cafe de Eleta S.A. for post-harvest processing. The processing plant is about 4 kilometers from the farm and includes a modern laboratory for cupping quality control and manual selection.

Brewing Recommendations

Hand-pour Cupid method: 15g of coffee, medium grind (Fuji鬼齿刀 #4 grind), V60 dripper, water temperature 88-89°C. First pour with 30g of water, let bloom for 27 seconds. Pour to 105g and stop, wait until the water level drops to half before continuing to pour. Slowly pour until reaching 225g total, avoiding the tail end. Water-to-coffee ratio 1:15, extraction time 2:00.
