The Ninety Plus Philosophy

Ninety Plus beans take a completely different approach to naming compared to conventional specialty coffees. They don't use region or estate names; instead, each coffee is named according to its flavor profile. For example, Zhuhuang means "best approach" in the local dialect. They start with a flavor concept, then name the coffee, and finally select regions and partner farms. This shows that Ninety Plus is a brand with a boutique operational style.

Ethiopian Coffee Overview

In Ethiopia, you can find various coffee cultivation methods: from vast wild coffee forests and semi-developed land to traditional small plots and modern plantations. About 50% of coffee is grown at altitudes above 1,500 meters. Ethiopian coffee is divided into nine major coffee regions based on these four different production methods, including five specialty coffee regions: Sidamo, Yirgacheffe, Harrar, Limu, and Lekempti, as well as four commercial coffee regions: Djimmah, Illubabor, Tepi, and Bebeka. Each region uses either natural or washed processing methods, and the different processing methods affect the flavor. Currently, natural processing accounts for about 80%, while washed processing accounts for about 20%.

Brewing Instructions

For pour-over Sidamo: Use 15g of coffee, ground to medium-fine (Fuji Royal grinder setting 3.5), V60 dripper, water temperature 91-93°C. First pour 30g of water for a 27-second bloom, then pour to 105g and pause. Wait until the water level drops to half, then continue pouring slowly until reaching 225g total. Avoid the tail end. Water-to-coffee ratio 1:15, extraction time 2:00.

They are all Ethiopian heirloom varieties, cultivated in ecological environments and processed to artistic standards with flavor optimization. The processing is Ninety Plus' specialty—they separate these coffees by variety, microclimate, and harvest timing, tasting each one individually. They design specific processing methods for each flavor profile, achieving a distinctive flavor characteristic, much like how major fashion designers meticulously research and pour their heart into creating a near-artistic masterpiece. Natural products undergo numerous refinements and improvements before finally presenting their most beautiful form to everyone.

Processing Excellence

The ancient natural processing method makes it difficult to achieve pure flavors, but Drima Zede, with Ninety Plus' technical support, only hand-selects the most mature coffee cherries. The natural drying process involves meticulous constant stirring to ensure uniformity. The final result is an exceptionally transparent and clean mouthfeel with dramatic changes between hot and cold temperatures.
