Compared to the traditionally natural-processed Harar region, natural-processed Yirgacheffe is less common. As the region where Ethiopia's first wet processing mill was established, coffee enthusiasts are more familiar with the washed Yirgacheffe known for its elegant lemon and citrus characteristics.

Washed-processed coffee is less likely to exhibit wild flavors, possessing clean and refreshing qualities that are suitable for light roasting. This washed Ethiopian coffee can reach the highest G1 grade, already being a grade with very few defects.

Introduction

This bean comes from a single farm in Ethiopia, processed by the Worka Cooperative. Alemayehu Alako Farm is a member of the Worka Cooperative.

The Worka Cooperative is located in the southern part of Gedeb district, established in 2005, and joined the famous Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) that same year. It is renowned for producing high-quality natural-processed Yirgacheffe coffee. The Worka Cooperative has approximately 300 coffee farmers as members. YCFCU was established in 2002 and includes 26 other cooperatives, serving over 45,000 coffee farmers.

Flavor Profile

Prominent floral notes with intense citrus aromatics in both dry and wet fragrance. The front palate presents lemon, kumquat, white grape juice, and diverse vibrant flavors. The mid-to-late palate features rich citrus sweetness with a soda-like richness of flavor. Distinctive personality, prominent, and quite rare.

Ethiopian Coffee Grading System

In Ethiopia's coffee grading system, washed Grade 2 and natural Grade 4 are the highest levels. Therefore, previously only Yirgacheffe WP G2 was commonly seen in the market.

Note: Yirgacheffe G1 was a grade specially requested by Japan's Mitsubishi from the Ethiopia Coffee & Tea Authority. It first appeared in the market during the 02-03 season. G1 grade beans are not produced through typical screening methods but are strictly hand-selected from green beans in the Knoga area of Yirga village, which has the highest altitude and excellent soil. The green beans are nearly identical in size with quite beautiful appearance, and almost no defective beans exist. After drinking, it better expresses the characteristics of Yirgacheffe. Due to the strict production process, the annual production of Yirgacheffe G1 is quite scarce, averaging about 600 bags.

The refining method for Yirgacheffe is predominantly the washed process, placed in washing tanks for about 72 hours to ferment and remove parchment, then dried directly outside the facility. The green beans are manually selected, inspected and qualified by the Ethiopia Coffee and Tea Authority, then exported through competitive bidding. Annual production is approximately 225,000 bags (60kg each), previously mainly sold to Northern Europe (primarily Germany) and Japan, and recently gaining attention from North America.

Yirgacheffe Region

Yirgacheffe itself is a small town with about 20,000 people. The three neighboring small regions of Wenago, Kochere, and Gelena Abaya produce coffee with flavors nearly identical to Yirgacheffe, so they are also classified under the Yirgacheffe regional designation. Yirgacheffe is similar to neighboring Sidamo in both culture and geographical environment, but Yirgacheffe seems to be more favored with unique advantages. Top-quality Yirgacheffe coffee features floral notes, bright citrus fruit acidity, lemon-toned aromatics, and a silky smooth mouthfeel.

Brewing Instructions

Hand-pour brewing for washed Worka: 15g of coffee grounds, medium-fine grind (Fuji Royal grinder with ghost teeth at 3.5 setting), V60 dripper, water temperature 90-92°C. First pour 30g of water for 27 seconds pre-infusion, then pour to 105g and pause. Wait until the water level drops to halfway, then slowly pour until reaching 225g total. Avoid the tail end. Water-to-coffee ratio 1:15, extraction time 2:00.
