Introduction

This coffee comes from a single farm in Ethiopia, processed by the Worka Cooperative. Alemayehu Alako Farm is a member of the Worka Cooperative.

The Worka Cooperative is located in the southern part of Gedeb District and was established in 2005. In the same year, it joined the renowned Yirgacheffe Coffee Farmers Cooperative Union (YCFCU), becoming famous for producing high-quality natural processed Yirgacheffe coffee. The Worka Cooperative has approximately 300 coffee farmers as members. YCFCU was established in 2002 and includes 26 other cooperative members, serving over 45,000 coffee farmers.

Flavor Profile

Distinct floral aromatics, with intense citrus notes in both dry and wet aromatics. The front palate features lemon, kumquat, white grape juice, and diverse flavors. The middle to back palate presents rich citrus sweetness with a soda-like rich sweetness. Distinctive personality, prominent, and quite rare to encounter.

Ethiopia Coffee Grading System

In Ethiopia's coffee grading system, washed Grade 2 and natural Grade 4 are the highest grades. Therefore, in the past market, only Yirgacheffe WP G2 was commonly seen.

Note: Yirgacheffe G1 was a grade specially requested by Mitsubishi from the Ethiopia Coffee & Tea Authority. It first appeared in the market in 2002-03. The production method for G1 grade beans is not like regular screening, but rather from green beans in the Knoga area of Yirga village, which has the highest altitude and excellent soil. They are produced through strict manual selection. The green beans are nearly uniform in size, with quite beautiful appearance, and almost no defective beans exist. After drinking, one can better appreciate the characteristics of Yirgacheffe. Due to the strict production process, the annual output of Yirgacheffe G1 is quite rare, averaging around 600 bags.

The refined processing method for Yirgacheffe is mostly the washed processing method, placed in washing tanks for about 72 hours for fermentation and dehulling, then dried directly outside the processing plant. After manual selection of green beans, they pass quality inspection by the Ethiopia Coffee and Cocoa Authority and are exported through competitive bidding. The annual output is about 225,000 bags (60kg per bag). In the past, they were mainly sold to Northern Europe (primarily Germany) and Japan, and recently have gradually gained attention from North America.

Yirgacheffe Region

Yirgacheffe itself is a small town with about 20,000 people. The three neighboring small producing areas—Wenago, Kochere, and Gelena Abaya—are classified under the Yirgacheffe region because their coffee flavors are almost identical to Yirgacheffe. Whether in culture or geographical environment, Yirgacheffe is similar to the nearby Sidamo, but Yirgacheffe seems more favored with uniquely advantageous conditions. Top-quality Yirgacheffe coffee features floral aromatics, bright citrus fruit acidity, lemon-toned aromatics, and a silky smooth mouthfeel.

Brewing Method

Hand-pour brewing for washed Worka. 15g of coffee, ground to medium-fine (Fuji Royal grinder setting 3.5), V60 dripper, water temperature 90-92°C. First pour 30g of water for 27 seconds bloom, then pour to 105g and stop. Wait until the water level drops to half, then continue slow pouring until reaching 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

Processing Comparison

Compared to the traditionally natural processed Harar region, natural processed Yirgacheffe is not common. As the region where Ethiopia's first washing station is located, coffee enthusiasts are more familiar with the washed Yirgacheffe known for its elegant lemon and citrus characteristics.

Coffee processed with the washed method is less likely to have wild flavors, possessing pure and refreshing characteristics, suitable for light roast levels. This washed Ethiopian coffee can reach the highest G1 grade, which already indicates very few defects.
