Flavor Profile
Distinct floral notes with rich citrus aromas in both dry and wet fragrance. The front end features lemon, kumquat, white grape juice, and diverse colorful flavors. The middle to back end presents rich citrus sweetness with a soda-like rich sweet sensation. The personality is distinct and prominent, truly rare and exceptional.
Ethiopia Coffee Grading System
In Ethiopia's coffee grading system, washed Grade 2 and natural Grade 4 are the highest grades. Therefore, in the past market, only Yirgacheffe WP G2 was available.
Note: Yirgacheffe G1 was a grade specially requested by Japan's Mitsubishi from the Ethiopia Coffee & Tea Authority. It first appeared in the market in 2002-2003. The production method for G1 grade beans is not like regular screening, but rather strictly hand-selected from green beans in the Knoga area of Yirga village, which has the highest altitude and excellent soil. The green beans are nearly identical in size, quite beautiful in appearance, and contain almost no defective beans. After drinking, one can feel it better expresses the characteristics of Yirgacheffe. Due to the strict production process, the annual output of Yirgacheffe G1 is quite rare, averaging about 600 bags.
Most of Yirgacheffe's processing methods use the washed processing method, fermented in washing tanks for about 72 hours to remove the pulp, then dried directly outside the plant. After manual selection of green beans, they pass quality inspection by the Ethiopia Coffee and Tea Authority and are exported through competitive bidding. The annual output is about 225,000 bags (60kg per bag). In the past, they were mainly sold to Northern Europe (mainly Germany) and Japan, but recently they have also gained attention from North America.

Yirgacheffe Region
Yirgacheffe itself is a small town with about 20,000 people. The three neighboring small producing areas - Wenago, Kochere, and Gelena Abaya - produce coffee with flavors almost identical to Yirgacheffe, so they are also classified under the Yirgacheffe regional category. Whether in culture or geographical environment, Yirgacheffe is similar to neighboring Sidamo, but Yirgacheffe seems more favored with exceptionally advantageous conditions. Top-quality Yirgacheffe coffee features floral notes, bright citrus fruit acidity, lemon-toned aromas, and a silky smooth mouthfeel.
Brewing Method
Hand-pour washed Worka. 15g of coffee, medium-fine grind (Fuji Royal grinder with ghost teeth at 3.5), V60 dripper, water temperature 90-92°C. First pour 30g of water, let it bloom for 27 seconds. Pour to 105g and stop pouring, wait until the water level drops to half, then slowly pour until reaching 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.
Processing Characteristics
Compared to the traditionally natural-processed Harar region, natural-processed Yirgacheffe is not common. As the region where Ethiopia's first washing station is located, coffee enthusiasts are more familiar with the washed Yirgacheffe known for its elegant lemon and citrus characteristics.
Washed-processed coffee flavors are less likely to have wild characteristics, possessing pure and fresh qualities, suitable for light roast degrees. This washed Ethiopian coffee can reach the highest G1 grade, which already indicates very few defects.
Introduction
This bean comes from a single farm in Ethiopia, processed by the Worka Cooperative. Alemayehu Alako farm is a member of the Worka Cooperative.
The Worka Cooperative is located in the southern part of Gedeb district, established in 2005, and joined the famous Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) in the same year. It is known for producing high-quality natural-processed Yirgacheffe. The Worka Cooperative has about 300 coffee farmers under its umbrella. YCFCU was established in 2002 and includes 26 other cooperatives, serving over 45,000 coffee farmers.
