The beans have a sweet and clean character. Using the semi-dry processing method makes its acidity slightly bright yet beautifully integrated with sweetness. For pour-over brewing of Brazil Queen Farm: 15g of coffee, medium grind (Fuji ghost tooth grinder setting 4), V60 dripper, water temperature 88-89°C. First pour 30g of water, bloom for 27 seconds. Pour to 105g and stop. Wait until the water level drops to half, then slowly pour until reaching 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

Located in the high mountain area near the Minas border in São Paulo state, at elevations of 1200-1400 meters. Annual rainfall is abundant, reaching over 1800mm, but without disastrous downpours. The average annual temperature is only 19°C, causing coffee fruit to grow slightly slower but with sufficient density. Although production is lower, the aroma and flavor are unmatched by ordinary Brazilian highland beans. This farm mainly grows Bourbon varieties, including some over 110-year-old ancient Bourbon trees.

Fazenda Rainha's Coffee Processing System

Ripe cherries are hand-picked into cloth bags to avoid contact with the ground. Coffee cherries harvested on the same day are always sent to the farm's processing facility on the same day for pulped natural processing. Using hand-picking and cloth bags for post-harvest collection helps avoid earthy flavors and any improper fermentation. When these harvested coffee cherries arrive at the processing facility, they immediately undergo "washing": the coffee cherries are cleaned, and unqualified or dried fruits (bóia beans) are filtered out based on bean size. The qualified beans continue to the depulping process (using a pulper).

After removing the pulp, the coffee beans still have some mucilage attached to the parchment shell. At this point, these beans with mucilage are placed on patios to dry until the moisture content drops to around 20%. This stage allows the coffee beans to absorb their own starch components without the disadvantages of full natural processing, where the drying process flavor cannot be controlled. These residual mucilage starch components create a special sweetness but won't get out of control to become off-fruit taste or moldy flavors.

Afterward, they are sent to dryers for final drying, reducing moisture content to 11%, then transported to storage for resting treatment. Before export, they are hulled and graded. This staged Pulped Natural method is one of the main reasons for Fazenda Rainha's stable flavor. Of course, insisting on using Bourbon varieties is another reason for its extremely high reputation!
