Hand Brew Method

Brazil Fazenda Rainha hand brew. 15g of coffee, medium grind (Fujiyama ghost tooth grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g of water for a 27-second bloom, then pour to 105g and pause. Wait until the water level drops halfway, then slowly pour until reaching 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

Many large and small farms in Brazil have hoped over the years to qualify for awards, but this has been difficult to achieve. Annual rainfall is abundant, reaching over 1800mm, but not causing flood disasters. The average annual temperature is only 19°C, so the coffee fruit grows slightly slower but with sufficient density. Although the yield is lower, the aroma and flavor are unmatched by ordinary Brazilian highland beans. This farm mainly grows Bourbon varieties, with some Bourbon trees over 110 years old.

Fazenda Rainha's Coffee Processing System

Ripe cherry fruits are hand-picked into cloth bags to avoid contact with the ground. Coffee fruits harvested on the same day are always sent to the farm's processing facility for pulped natural processing on the same day. Using hand-picking and cloth bags for harvested coffee fruits avoids earthy flavors and any improper fermentation. When these harvested coffee fruits arrive at the processing facility, they immediately undergo "washing": the coffee fruits are cleaned, and unqualified or dried fruits (bóia beans) are screened out according to bean size. The qualified beans continue to the depulping process (using a pulper machine).

After removing the pulp, the coffee fruits still have some mucilage layer on the parchment shell. At this point, these coffee fruits with the mucilage layer are placed on patios to dry until the moisture content drops to around 20%. This stage allows the coffee fruits to absorb their own starch components while avoiding the drawbacks of the full natural method, where the drying process flavor cannot be controlled. These residual mucilaginous starch components provide a special sweetness but won't become uncontrolled off-fruit flavors or musty tastes.

Afterward, they are sent to drying machines for the final drying stage, processing the moisture content to 11%, then transported to storage for resting. Before export, they are hulled and graded. This segmented Pulped Natural method is one of the main reasons for Fazenda Rainha's stable flavor. Of course, insisting on using Bourbon varieties is another reason for its highly reputable flavor!
