Guatemala Caicero
This coffee is aromatic and pure, with unique floral notes and lemon-like acidity, perfectly balanced with rich, elegant flavors and smooth body, featuring a dark cocoa aftertaste.
Caicero means "like paradise" in Spanish. We collaborated with Seattle's most renowned culinary masters to create this coffee that pairs excellently with fine cuisine. It's wonderful with main courses or desserts, especially delicious vegetables, cheese, dark chocolate, or berries.

In the Central American region, especially in the deep forests and mountains of northern Guatemala, lives a relative of the woodpecker—the "Quetzal." Quetzal is an Indian word meaning "golden-green feathers." It is a famous "forest doctor" and one of the world's most beautiful birds. The female bird is the size of a pigeon, with gorgeous feathers all over its body, red belly and green back, with head and chest in light colors. Sometimes yellow, sometimes green, sometimes turning red, orange, displaying five colors, magnificent and colorful.
The Quetzal bird holds a revered position in the hearts of the Guatemalan people. It has a noble character and loves freedom, hence its beautiful name "Bird of Freedom." Quetzal birds like to live in pairs, inseparable, so they are also a symbol of love. Between young men and women, it means "dear." The beautiful Quetzal bird is the pride of the Guatemalan people, who regard it as a symbol of freedom, patriotism, and friendship. It has been officially declared the national bird by the government. It is used as a symbol on the national flag, emblem, and currency, and laws prohibit capturing Quetzal birds.
Few places in the world can offer the variety of high-quality coffee beans that Guatemala produces. The reason Guatemalan coffee beans have excellent quality lies in the unique conditions of their production areas; including different climate changes in each region, fertile soil formed by volcanoes, abundant natural water resources, high mountain ranges, and shady, humid forests.
Guatemala has seven main coffee producing regions: Antigua, Coban, Atitlan, Huehuetenango, Fraijanes, Oriente, and San Marcos.
Coffee beans from each producing region have their own characteristics and have won Guatemala considerable international acclaim. Especially Antigua, whose acid, sweet, and rich texture is so perfectly coordinated; plus a hint of smoky flavor that emphasizes its mystery. After tasting, you'll have reason not to look elsewhere for substitutes.
Most Guatemalan coffee beans are grown in high-altitude volcanic areas with soil belonging to the highest grade Arabica variety. Due to longer maturation periods, the beans are medium-sized and dense (Guatemalan coffee bean grading is not based on size but on the number of defects). The beans are dark green in color. Aroma, richness, sweetness, and refreshing, pleasant unique acidity are their characteristics, because the aroma and taste of coffee beans are hidden in their acidity. Therefore, only coffee beans with these characteristics can be called premium coffee beans. Product name suitable for roasting degree taste characteristics.

Recommended brewing method: Pour-over
Dripper: Hario V60
Water temperature: 90°C
Coffee-to-water ratio: 1:15
Grind size: BG 5R (Chinese standard No. 20 sieve pass rate 58%)
Brewing technique: 28g of water for bloom for 30 seconds, pour water to 127g in segments, when the water level drops and is about to expose the coffee bed, continue pouring to 225g and stop the water. When the water level drops and is about to expose the coffee bed, remove the dripper (timing starts from bloom). Extraction time is 1 minute 50 seconds.
Flavor: When grinding, you can smell rich nutty and spicy aromas with some slight fermented berry notes. When hot, it's quite balanced, with some fermented fruit aroma and genmaicha tea notes, featuring nutty and almond flavors. As the temperature drops, it reveals citrus, berry, and ripe fruit sweetness and acidity, with persistent sugarcane sweetness in the aftertaste. Overall, it's quite sweet and balanced.
