This Queen's Farm (Fazenda Rainha) belongs to the renowned and respected coffee family Carvalho Dias family. The four major estates under Carvalho Dias have won awards every year since the first Brazil COE competition in 1999, winning more than 12 times in 7 years. In 2004, they even swept the championship, 9th place, 11th place, etc. Many large and small estates in Brazil have hoped to be shortlisted for awards over the years but found it difficult. However, the estates under this family have won multiple awards year after year. Even the Queen's Farm Fazenda Rainfa purchased by O'Shea this time has a glorious record: 2000 runner-up, 2001 third place, 2005 29th place. To date, Queen's Farm has won awards three times.

Located in the mountainous area near the Minas border in São Paulo state, with an altitude of 1200 to 1400 meters, abundant annual rainfall reaching over 1800mm, but not causing flood disasters. The average annual temperature is only 19°C, so the coffee fruit grows slightly slower, but the texture density is sufficient. Although the yield is lower, the aroma and flavor are unmatched by ordinary Brazilian highland beans. This estate mainly grows Bourbon varieties, and even has over 110-year-old Bourbon varieties.

Queen's Farm's Coffee Processing System

Ripe cherry fruits are hand-picked into cloth bags to avoid falling to the ground. The coffee fruits harvested on the same day must be sent to the estate's processing plant for pulped natural processing on the same day. Using hand-picking and cloth bags for harvested coffee fruits is to avoid earthy flavors and any improper fermentation flavors. When these harvested coffee fruits arrive at the processing plant, they immediately undergo "washing": the coffee fruits are washed clean, and unqualified or dried fruits (bóia beans) are screened out according to bean size. The qualified beans that pass the screening continue to undergo depulping (using a pulper machine).

After removing the pulp, the coffee fruits still have some mucilage attached to the parchment shell. At this time, these coffee fruits with mucilage are placed on patios to dry until the moisture content drops to about 20%. This stage allows the coffee fruits to absorb their own starch components, while avoiding the disadvantage of uncontrollable drying process flavors found in fully natural processing. Because these residual mucilage starch components will have a special sweetness, but won't become uncontrolled off-fruit taste or moldy flavors.

Afterwards, they are sent to drying machines for final drying, processing the moisture content to 11%, then transported to storage for resting treatment. Before export, they are dehulled and graded. This segmented Pulped Natural processing method is one of the main reasons for Queen's Farm's stable flavor. Of course, insisting on using Bourbon varieties is another reason for her extremely high reputation for flavor!
