The Carvalho Dias family are founding members of the Brazilian Specialty Coffee Association, and their commitment to coffee quality and environmental protection is evident to all. Within their family farms, they utilize natural waterfalls to develop pollution-free hydroelectric power, making them self-sufficient in electricity needs (another of their award-winning farms is named after this waterfall as the Waterfall Estate). They have built churches, classrooms, nurseries, and medical stations, while insisting on maintaining the original forest with native flora and fauna and continuous reforestation. Taking Fazenda Rainha (Queen Farm) as an example, environmental protection is thoroughly implemented. Due to the high altitude terrain, which is not flatland, mechanical harvesting cannot be used—all coffee cherries are harvested entirely by hand. Located in the high mountain area near the Minas border in São Paulo state, with an altitude ranging from 1200 to 1400 meters. The annual rainfall is abundant, reaching over 1800mm, but without causing flooding disasters. The average annual temperature is only 19°C, which means the coffee cherries grow slightly slower, but the bean density is excellent. Although the yield is lower, the aroma and flavor are unmatched by typical Brazilian highland coffee beans. This estate primarily grows Bourbon varieties, including Bourbon trees over 110 years old.

Fazenda Rainha's Coffee Processing System

Ripe coffee cherries are hand-picked into cloth bags to avoid contact with the ground. Coffee cherries harvested on the same day are always sent to the estate's processing facility for pulped natural processing on the same day. Using hand-picking and cloth bags for harvested coffee cherries avoids earthy flavors and any improper fermentation. When these harvested coffee cherries arrive at the processing facility, they immediately undergo "washing": the coffee cherries are cleaned, and unqualified or dried fruits (bóia beans) are screened out based on bean size. The qualified beans that pass the screening continue to the pulping process (using a pulper machine).

After removing the pulp, the coffee beans still have some mucilage attached to the parchment. At this stage, these beans with residual mucilage are placed on patios for drying until the moisture content drops to around 20%. This stage allows the coffee beans to absorb their own starch components, yet avoids the disadvantage of uncontrolled drying process flavors found in fully natural processing. These residual mucilage starch components provide a special sweetness without becoming uncontrolled off-fruit tastes or moldy flavors.

Afterward, they are sent to drying machines for final drying, processing the moisture content to 11%, then transported to storage for resting. Before export, they are hulled and graded. This segmented pulped natural method is one of the main reasons for Fazenda Rainha's stable flavor. Of course, insisting on using Bourbon varieties is another reason for her excellent flavor reputation!

Hand-pour Brazil Fazenda Rainha. Use 15g of coffee, medium grind (Fuji Royal #4 grinding), V60 dripper, water temperature 88-89°C. First pour 30g of water, let bloom for 27 seconds. Pour to 105g and pause, wait until the water level drops to half, then slowly pour until reaching 225g. Avoid the tail end. Water-to-coffee ratio 1:15, extraction time 2:00.
