Brazilian Coffee: Diversity and Excellence
In some estates of the Cerrado region, Minas Gerais state, in southeastern Brazil, ancient Bourbon and Yellow Catuai coffees are cultivated. These estates, though from the same region, each offer coffees with distinct characteristics. Despite this diversity in coffee, Brazilian coffee suits popular tastes. As the largest coffee-producing region, it accounts for one-third of global consumption with various grades and types of coffee, holding a significant place in the global coffee trading market. Although Brazil faces natural disasters several times higher than other regions, its cultivable area is sufficient to compensate.
Primavera Estate Yellow Catuai
Fazenda Primavera, Minas Gerais - Yellow Catuai [Washed Processing] Flavor notes: Orange, peanut, brown rice tea, nuts, caramel finish, with the sweet and sour sensation of fresh orange juice and a smooth texture - typical of sun-dried Brazilian flavor.
Yellow Catuai comes from a hybrid of Mundo Novo and Caturra, first cultivated in 1949 by Brazil's Instituto Agronomico de Campinas. Like Red Catuai, Yellow Catuai has extremely high disease resistance and is suitable for cultivation at high altitudes.
Brewing Method
Hand-pour brewing for Brazil's Primavera Estate: 15g coffee grounds, medium grind (using Fuji's ghost-tooth grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g water, let bloom for 27 seconds. Pour to 105g and pause, wait until the water level drops halfway before continuing. Slowly pour until reaching 225g total, discarding the tail. Water-to-coffee ratio 1:15, extraction time 2:00.

The HiU program is a coffee quality improvement initiative for Central and South America, proposed by Mr. Graciano Cruz from Panama, a renowned figure in honey processing.
The program focuses on post-harvest processing using sun-drying or honey processing methods for micro lots. Only coffees that achieve cupping scores above 85 can bear the HiU seal, creating a win-win situation for both estate owners and processors.

Taste Profile
Brazilian coffee features low acidity complemented by coffee's bittersweet notes, with an extremely smooth mouthfeel and subtle grassy aromatics. It delivers a light fragrance with mild bitterness, sweet and smooth on the palate, with a refreshing aftertaste. Brazilian coffee may not have particularly outstanding advantages, but it also has no obvious flaws. This mild, smooth flavor profile with low acidity, moderate body, and subtle sweetness combines all these gentle notes. Distinguishing each element individually presents the ultimate challenge to the taste buds.
