While this region offers numerous coffee varieties, its industrial policy focuses on mass production at low costs, resulting in fewer truly exceptional coffees. However, these beans serve as excellent choices for blending with other coffees.

Brazilian coffee features lower acidity complemented by pleasant bitterness and sweetness, creating an exceptionally smooth mouthfeel with subtle grassy aromatics. The combination of light fragrance, gentle bitterness, and smooth, satisfying aftertaste provides a refreshing experience. While Brazilian coffee may not possess particularly outstanding characteristics, it also lacks obvious flaws. This mild, smooth profile with low acidity, moderate body, and subtle sweetness creates a harmonious blend of flavors that truly challenges the palate to distinguish each individual note.

In the Cerrado region of Minas Gerais state in southeastern Brazil, some estates cultivate ancient Bourbon and Yellow Catuai varieties. Primavera Estate Yellow Catuai [Washed Process]
Flavor: Orange, peanuts, genmai tea, nuts, caramel aftertaste. Fresh orange juice-like sweetness and acidity with smooth texture, typical of natural Brazilian coffee character.

Yellow Catuai originates from a cross between Mundo Novo and Caturra varieties, first developed in 1949 by Brazil's Instituto Agronômico de Campinas. Like Red Catuai, Yellow Catuai demonstrates excellent disease resistance and thrives in high-altitude cultivation.

Brewing Method

Pour-over brewing for Brazil Primavera Estate: 15g coffee, medium grind (using Fujiyama conical burrs at setting 4), V60 dripper, water temperature 88-89°C. First pour: 30g water, bloom for 27 seconds. Continue pouring to 105g, then pause until the bed drains halfway. Slowly pour until reaching 225g total, avoiding the final tail section. Water-to-coffee ratio: 1:15, total extraction time: 2:00.
