The Origins of Panama Coffee

Panama coffee originated in 1780 when European immigrants introduced the first batch of Typica varieties. Located in Central America, it possesses natural advantages including sunshine, fertile land, and high mountains, coupled with an ample labor force, making this region an exceptional area for cultivating high-quality specialty coffee—it is truly a paradise for coffee cultivation. Especially the Geisha variety from Panama has sparked a global trend of attention to specialty coffee, successfully attracting worldwide market interest in Panama coffee.

The Boquete region is Panama's oldest and most renowned coffee-producing area, situated on the eastern side of Baru Volcano at an average altitude of approximately 1,000-2,000 meters on a plateau. Among these, "Volcan Baru National Park" serves as an ecological conservation area with extremely rich biodiversity, featuring multiple microclimates. Combined with year-round mist coverage and abundant rainfall, this creates excellent local cultivation conditions, giving Boquete coffee its unique aroma. It stands as Panama's most productive and highest-quality coffee-producing region.

During each harvest season, coffee farmers use the washed processing method and sun-drying to ensure the coffee beans are full-bodied with pure flavor.

Baru Volcano's Natural Advantages

Baru Volcano is not only Panama's highest mountain range—the sedimentary materials created by early volcanic activity and eruptions have brought large quantities of extremely fertile soil. This soil is rich in nutrients, with volcanic ash particularly abundant in phosphorus and sulfur. Mixed with clay and combined with unique climate patterns, this creates an environment suitable for growing premium coffee. The dense forests and numerous species form an overall biodiversity.

Traditional Cultivation Methods

Here, approximately 50 coffee farmers form a small cooperative, all using traditional Boquete methods to produce coffee—allowing coffee to grow in a near-natural environment. Although production volume is not high, this maintains a rich ecological environment, and soil quality can be preserved or even improved. Natural cultivation methods not only benefit the environment, but because coffee cherries grow slowly, they more easily develop high-quality, exceptionally flavorful coffee beans.

Farmers manually harvest complete coffee cherries and send them to the nearby Cafe de Eleta S.A. for post-processing. The processing facility is located about 4 kilometers from the farm and includes a modern laboratory for cupping quality control and manual selection.

Brewing Recommendations

For pour-over brewing Cupido: Use 15g of coffee ground to medium consistency (using a Fuji grinder with ghost tooth burrs at setting 4), V60 dripper, water temperature 88-89°C. First pour 30g of water and let bloom for 27 seconds. Pour to 105g and pause, wait until the water level drops to half, then slowly pour until reaching 225g total. Avoid the final tail section. Water-to-coffee ratio is 1:15, extraction time 2:00.

Tasting Notes

Clean and transparent body, with white grape and caramel aromas followed by honey sweetness, and enchanting high mountain tea fragrance! High sweetness, low acidity, with a rounded mouthfeel. Drinking it feels like falling in love—experiencing sweet and sour sensations every day.
