The Unique Charm of Drima Zede Coffee
As another Ethiopian natural-processed coffee bean, Drima Zede has undergone rigorous supervision and selection to avoid the unpleasant earthy flavors and high defect rates commonly found in natural-processed beans. Instead, it highlights the captivating sweetness that makes natural processing so renowned. Drima Zede's enchanting fruit notes inherit the captivating aroma characteristic of traditional Ethiopian natural processing, unreservedly expressing a smooth, full-bodied sweetness with a long aftertaste, complemented by恰到好处的 mouthwatering fruit acidity. Drima Zede is also quite approachable for daily brewing. The beans themselves are rich in flavor, and whether prepared with the refreshing pour-over method or rich espresso brewing, they beautifully showcase their inherent character.

The Drima Zede flavor from the 90+ Level Up series features nectarine, tropical fruits, with a clean and bright mouthfeel that is truly impressive from the first sip.

About 90+ Coffee
90+ beans adopt a completely different naming approach compared to conventional specialty coffees. They don't include region or estate names; instead, each coffee is named according to its flavor profile. For example, Drima Zede means "best approach" in the local dialect. Starting from a flavor concept, then naming, followed by selection of regions and partner farms, this demonstrates that 90+ is a brand with boutique management style.
Ethiopian Coffee Cultivation
In Ethiopia, various coffee cultivation methods can be found: from vast wild coffee forests and semi-developed lands to traditional small plots and modern plantations. About 50% of coffee is grown at altitudes above 1500 meters. Ethiopian coffee can be divided into nine major coffee regions based on these four different production methods, including five specialty coffee regions: Sidamo, Yirgacheffe, Harar, Limmu, and Kaffa, as well as four commercial coffee regions: Jimma, Illubabor, Tepi, and Bebeka. Each region uses either natural or washed processing methods, and different processing methods affect the flavor. Currently, natural processing accounts for about 80%, while washed processing accounts for about 20%.
The Ninety Plus Philosophy
"Ninety Plus" does not refer to all coffees scoring above 90 points. Good coffee may be available one year and not the next. Sometimes it appears in different estates with various flavor characteristics. "Ninety Plus" refers to a series of 13 premium coffee varieties. These coffees come exclusively from NinetyPlusCoffee, an American specialty coffee creator. All are Ethiopian Heirloom varieties, cultivated to maturity in ecological environments and processed to artistic standards with flavor optimization. The processing is Ninety Plus's specialty - they separate these coffees by variety, microclimate, and harvesting timing, tasting each one individually and designing specific processing methods for each flavor profile, much like how major fashion designers carefully research and dedicate themselves to creating near-artistic crafts. Natural products undergo extensive refinement and improvement before reaching their most beautiful form to be presented to everyone.
Processing Excellence
The ancient natural processing method rarely achieves pure flavor profiles, but Drima Zede, with 90+ technical support, involves only hand-selecting the most mature coffee cherries. The natural drying process requires meticulous constant stirring to ensure uniformity. The final result is an exceptionally transparent and clean mouthfeel with dramatic changes between hot and cold temperatures. The fruit, floral, and oak barrel aromas are truly captivating!
