The NinetyPlus Philosophy
NinetyPlus beans take a completely different approach to naming compared to conventional specialty coffees, featuring no region or estate names. Each coffee is named according to its flavor profile. For instance, Zhumang means "best approach" in the local dialect. Starting with a flavor concept, then naming, followed by selection of regions and partner farms, demonstrates that NinetyPlus is a brand with boutique经营 style.
Ethiopian Coffee Regions
In Ethiopia, various coffee cultivation methods can be found: from extensive wild coffee forests and semi-developed lands to traditionally managed small plots and modern plantations. Approximately 50% of coffee is grown at altitudes above 1500 meters. Ethiopian coffee, according to these four different production methods, is divided into nine major coffee regions nationwide, including five specialty coffee zones: Sidamo, Yirgacheffe, Harrar, Limu, and Lekempti, as well as four commercial coffee regions: Jimma, Illubabor, Tepi, and Bebeka. Each region employs either natural or washed processing methods, with different processing methods affecting flavor profiles. Currently, natural processing accounts for about 80%, while washed processing accounts for about 20%.
NinetyPlus Excellence
"NinetyPlus" does not refer to all coffees scoring above 90 points in evaluations. Good coffee appears one year, disappears the next. Sometimes it emerges from different estates, possessing various flavor characteristics. "NinetyPlus" refers to a series of 13 top-tier premium coffees. These coffees come exclusively from American specialty coffee creators - NinetyPlus Coffee. They are all Ethiopian heirloom varieties, cultivated to maturity in ecological environments, then processed to artistic standards with flavor optimization. The processing process is NinetyPlus's specialty - these coffees are separated by variety, microclimate, and harvest timing, each tasted individually, with processing methods specifically designed for each flavor profile to achieve a distinctive character, much like how major luxury brands design their products - with meticulous research and dedicated effort to complete a craft that approaches art. Natural products undergo numerous refinements and improvements before reaching their most beautiful state, only then are they presented to everyone.
Drima Zede Processing Innovation
The ancient natural processing method makes it difficult to achieve pure flavors, but Drima Zede, with NinetyPlus technical support, involves hand-selecting only the most mature coffee cherries, with painstaking constant stirring during the natural drying process to ensure uniformity. The final result is an exceptionally transparent and clean taste with significant variations between hot and cold, with enchanting fruit, floral, and oak barrel aromas!
Zhumang's Exceptional Quality
As an Ethiopian natural processed coffee, Zhumang undergoes strict supervision and selection, avoiding the annoying earthy impurities and high defect rates commonly found in natural processed beans. Instead, it highlights the captivating sweetness for which natural processing is renowned. Zhumang's enchanting fruity notes inherit the captivating aroma bestowed by traditional Ethiopian natural processing, expressing without reservation the round, full-bodied, long-lasting sweetness and the perfectly mouth-watering fruit acidity. Zhumang's daily brewing is also quite easy to master. The beans themselves are rich in flavor, whether using the refreshing drip filter method or the rich siphon brewing, they can excellently showcase their inherent characteristics.
