90+ Zhu Mang Pour-Over Data: How to Brew 90+ Zhu Mang Coffee
Pour-over Sidamo
15g of coffee grounds, medium-fine grind (Fuji ghost tooth blade grinder setting 3.5), V60 dripper, water temperature 91-93°C. First pour with 30g of water for a 27-second bloom, then pour to 105g and pause. Wait until the water level in the coffee bed drops to halfway before continuing to pour. Slowly pour until reaching 225g total, discarding the tail end. Water-to-coffee ratio is 1:15, extraction time 2:00.
The Ninety Plus Coffee Philosophy
90+ beans adopt a completely different naming approach compared to typical specialty coffee beans. They don't feature region or estate names; instead, each coffee is named according to its flavor profile. For example, "Zhu Mang" means "best approach" in the local dialect. Starting from a flavor concept, they name the coffee, then move to selecting regions and partner farms. This shows that 90+ is a brand with boutique management style.
Ethiopia's Coffee Heritage
In Ethiopia, you can find various coffee cultivation methods: from vast wild coffee forests and semi-developed lands to traditionally managed small plots and modern plantations. About 50% of coffee is grown at altitudes above 1,500 meters. Based on these four different production methods, Ethiopia can be divided into nine major coffee regions, including five specialty coffee areas: Sidamo, Yirgacheffe, Harrar, Limu, and Lekempti, as well as four commercial coffee regions: Jimma, Illubabor, Tepi, and Bebeka. Each region uses either natural or washed processing methods, and different processing methods affect the flavor. Currently, natural processing accounts for about 80%, while washed processing accounts for about 20%.
The Ninety Plus Legacy
"Ninety Plus" doesn't refer to all coffees scoring 90 points or above in evaluations. Good coffee appears some years and not others. Sometimes it emerges from different estates with varying flavor characteristics. "Ninety Plus" refers to a premium coffee series of 13 flavor profiles. These coffees come exclusively from American specialty coffee creators – Ninety Plus Coffee. They are all Ethiopian heirloom varieties, cultivated in ecological environments and processed to artistic standards for flavor optimization.
The processing is Ninety Plus's specialty. They separate these coffees by variety, microclimate, and harvest timing, tasting each one individually. They design specific processing methods for each flavor profile to achieve distinct flavor characteristics, much like major fashion designers dedicate themselves to creating artistic masterpieces. Natural products undergo numerous refinements and improvements before reaching their most beautiful form to be presented to everyone.
Drima Zede: Exceptional Natural Processing
The traditional natural processing method makes it difficult to achieve pure flavors, but with Ninety Plus technical support, Drima Zede uses only hand-selected fully ripe coffee cherries. The natural drying process involves meticulous constant stirring to ensure uniformity. The final result is an exceptionally transparent and clean taste, with significant variations between hot and cold temperatures. The aromas of fruit, flowers, and oak barrels are utterly captivating!
Zhu Mang: The Essence of Ethiopian Natural Coffee
As an Ethiopian natural coffee, Zhu Mang, after undergoing strict supervision and selection, avoids the irritating earthy impurities and high defect rates common in typical natural coffees. Instead, it highlights the captivating sweetness for which natural processing is renowned. Zhu Mang's enchanting fruit tones inherit the fascinating aromas bestowed by traditional Ethiopian natural processing, unreservedly expressing round, full-bodied sweetness with lingering aftertaste and恰到好处的 fruit acidity that stimulates the palate.
Zhu Mang is also quite easy to brew daily. The beans themselves are rich in flavor. Whether using the clean pour-over method or the concentrated siphon brewing, they can fully showcase their distinctive character.
