In some estates of the Cerrado region, Minas Gerais state, southeastern Brazil, ancient Bourbon and Yellow Catuai coffees are cultivated. These estates, though originating from the same region, each produce coffees with distinct characteristics. Despite the diversity of coffee, Brazilian coffee suits the popular palate. As the largest coffee-producing region, it accounts for one-third of global consumption with various grades and types of coffee, holding a significant position in the global coffee trading market. Although Brazil faces natural disasters several times higher than other regions, its cultivable area is sufficient to compensate.

Fazenda Primavera Yellow Catuai

Minas Gerais State - Fazenda Primavera - Yellow Catuai [Washed Processing] Flavor: Orange, peanut, roasted rice tea, nuts, caramel finish, with the sweet-tart sensation of fresh orange juice and smooth texture - typical of natural Brazilian flavor.

Yellow Catuai comes from a hybrid of Mundo Novo and Caturra, first cultivated in 1949 by Brazil's Instituto Agronomico de Campinas. Like Red Catuai, Yellow Catuai has extremely high disease resistance and is suitable for cultivation at high altitudes.

Hand Brew Instructions

Hand-brewed Brazilian Fazenda Primavera: 15g coffee, medium grind (small Fuji ghost tooth grinder #4), V60 dripper, 88-89°C water temperature. First pour 30g water, bloom for 27 seconds, pour to 105g and pause, wait until the coffee bed drops to half level before continuing, slowly pour until reaching 225g total. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

It focuses on post-harvest processing of micro lots using natural or honey processing methods. Only coffees that achieve cupping scores above 85 can bear the HiU seal, creating a win-win situation for estate owners and processors.

Although there are numerous coffee varieties here, the industrial policy emphasizes mass production and low cost, so truly premium coffees are not abundant, but they serve as excellent choices for blending with other coffees.

The Character of Brazilian Coffee

Brazilian coffee features lower acidity, complemented by the bitter-sweetness of coffee, creating an extremely smooth mouthfeel with a subtle grassy fragrance. It's light and aromatic with a hint of bitterness, yet sweet and smooth on the palate, leaving a refreshing aftertaste. For Brazilian coffee, there are no particularly outstanding advantages, but also no obvious shortcomings. This flavor profile is mild and smooth, with low acidity, moderate body, and a subtle sweetness - all these gentle flavors blend together, making it the ultimate test for the taste buds to distinguish them individually.
