First pour with 30g water, bloom for 27 seconds. Pour to 105g and pause, wait until the water level drops halfway, then slowly pour until reaching 225g total

First pour with 30g of water for 27 seconds bloom, then pour to 105g and pause. Wait until the water level in the coffee bed drops to half before continuing the pour. Slowly pour until reaching 225g total. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

The HiU program is an initiative to improve coffee quality in Central and South America, proposed by Mr. Graciano Cruz from Panama, a renowned expert in honey processing.

The program focuses on applying natural or honey processing methods to micro lots, with only coffees scoring above 85 points in cupping qualifying for the HiU seal. This creates a win-win situation for both estate owners and processors.

Brazil offers a wide variety of coffee types, but its industrial policy emphasizes mass production and affordability, so truly premium coffees are relatively rare. However, Brazilian coffee serves as an excellent choice for blending with other coffees.

Brazilian coffee features lower acidity, complemented by its sweet and bitter notes, creating an exceptionally smooth mouthfeel with subtle grassy aromatics. It's fragrant with a slight bitterness, smooth and pleasant to drink, leaving a refreshing aftertaste. While Brazilian coffee may not have particularly outstanding advantages, it also has no obvious flaws. This mild, smooth flavor profile with low acidity, moderate body, and subtle sweetness combines all these delicate notes into a harmonious blend that truly tests the palate's ability to distinguish individual characteristics.

In some estates within the Cerrado region of Minas Gerais state in southeastern Brazil, ancient Bourbon and Yellow Catuai varieties are cultivated. Although these estates are located in the same region, each coffee possesses distinct characteristics. Despite this diversity, Brazilian coffee appeals to popular taste. As the largest coffee producer, Brazil accounts for one-third of global coffee consumption across various grades and types, holding a significant position in the global coffee trading market. Although Brazil faces natural disasters several times more frequently than other regions, its vast cultivable area more than compensates for this challenge.

Minas Gerais Primavera Estate Yellow Catuai [Washed Processing]

Flavor Notes: Orange, peanuts, roasted rice tea, nuts, caramel finish. Features the sweet and tangy sensation of fresh orange juice with a smooth texture - typical of natural-processed Brazilian coffee.

Yellow Catuai is a hybrid of Mundo Novo and Caturra, first developed in 1949 by Brazil's Instituto Agronômico de Campinas (IAC). Like Red Catuai, Yellow Catuai possesses excellent disease resistance and is suitable for cultivation at high altitudes.
