Panama Coffee: Origins and Terroir

Panama coffee originated in 1780 when European immigrants introduced the first batch of Typica varieties. Located in Central America with natural advantages of sunshine, fertile land, and high mountains, plus an ample labor force, the region has become an excellent area for cultivating high-quality specialty coffee—a true paradise for growing coffee. In particular, Geisha variety coffee from Panama has led the global trend of specialty coffee, successfully attracting worldwide market interest in Panamanian coffee.

The Boquete region is Panama's oldest and most famous coffee-producing area, situated on the eastern side of Baru Volcano at an average altitude of approximately 1,000-2,000 meters. The "Volcan Baru National Park" within this region is a conservation area with extremely rich biodiversity and various microclimates. Perpetually shrouded in mist with abundant rainfall, these conditions create excellent cultivation environment, giving Boquete coffee unique aromas and making it the region with highest production and best quality.

During each harvest season, coffee farmers use the refined washed method and sun-drying process, resulting in full, flavor-pure green coffee beans.

Baru Volcano: Foundation of Excellence

Baru Volcano is not only Panama's highest mountain range; early volcanic activity and eruptions created substantial, extremely fertile soil deposits. These soils are rich in nutrients, with volcanic ash particularly abundant in phosphorus and sulfur. Combined with clay and unique climate patterns, this region forms an environment perfect for growing premium coffee. Dense forests and numerous species create overall biodiversity.

Brewing Method: Hand Pour Cupid

15g coffee grounds, medium grind (Fujiyama serrated burr grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g water, bloom for 27 seconds. Pour to 105g and pause, wait until the water level drops to half, then slowly pour until reaching 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

Farming Practices

About 50 coffee farmers here form a small cooperative, all using traditional Boquete methods to produce coffee—letting coffee grow in a near-natural environment. Although production volume is not high, this approach maintains a rich ecological environment, preserving or even improving soil quality. Natural farming methods benefit not only the environment but also result in high-quality, exceptionally flavorful coffee beans due to slow growth. Farmers manually harvest complete coffee cherries and send them to the nearby Cafe de Eleta S.A. for processing. The processing facility is about 4 kilometers from the farm and includes a modern laboratory for cupping quality control and manual sorting.

Tasting Profile

Clean and transparent body, with white grape and caramel aromas followed by honey notes, while the high mountain tea fragrance is captivating! High sweetness, low acidity, with a round mouthfeel. Drinking it feels like falling in love—experiencing sweet and tangy sensations every day.
