Panama coffee originated in 1780 when European immigrants introduced the first Typica varieties. Located in Central America, the region possesses natural advantages including sunshine, fertile land, and high mountains, combined with an ample labor force, making it an excellent area for cultivating high-quality specialty coffee - truly a paradise for nurturing coffee. In particular, Geisha variety coffee from Panama has sparked the global trend of focusing on specialty coffee, successfully attracting worldwide market interest in Panama coffee.
The Boquete region is Panama's oldest and most renowned coffee-producing area, situated on the eastern side of Baru Volcano, at an average altitude of approximately 1000-2000 meters. The "Volcan Baru National Park" within this region is an ecological conservation area with exceptionally rich biodiversity, featuring multiple microclimates. Combined with year-round mist coverage and abundant rainfall, this creates excellent cultivation conditions, giving Boquete coffee its unique aroma and making it the region with the highest production and best quality in Panama. During each harvest season, coffee farmers use refined washed processing and sun-drying methods, resulting in full-bodied green coffee beans with pure flavor profiles.
Baru Volcano is not only Panama's highest mountain range - early volcanic activity and eruptions created deposits that brought large quantities of extremely fertile soil. This soil is rich in nutrients, with volcanic ash particularly abundant in phosphorus and sulfur. When mixed with clay and combined with unique climate patterns, this creates an environment suitable for growing premium coffee. The dense forests and numerous species form an overall biodiversity that supports exceptional coffee cultivation.
Hand Brew Cupido
15g of coffee grounds, medium grind (using Fujiyama ghost tooth grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g of water for a 27-second bloom, then pour to 105g and pause. Wait until the water level in the coffee bed drops to halfway before continuing the pour. Slowly pour until reaching 225g total, discarding the tail end. Water-to-coffee ratio of 1:15, total extraction time 2:00.
Approximately 50 coffee farmers in this area form a small cooperative, all using traditional Boquete methods to produce coffee - allowing coffee to grow in a near-natural environment. Although production volume is not high, this approach maintains a rich ecological environment where soil quality can be preserved or even improved. Natural cultivation methods not only benefit the environment but also allow coffee cherries to grow slowly, making it easier to produce high-quality coffee beans with excellent flavor. Farmers hand-harvest complete coffee cherries and transport them to the nearby Cafe de Eleta S.A. for post-processing. The processing facility is located about 4 kilometers from the farms and includes a modern laboratory for cupping quality control and manual selection.
