Baru Volcanic Region: A Paradise for Premium Coffee

Baru Volcano is not only the highest mountain range in Panama, but the sedimentary materials created by early volcanic activity and eruptions have brought abundant and extremely fertile soil. These soils are rich in nutrients, and volcanic ash particularly contains abundant phosphorus and sulfur. Mixed with clay and combined with unique climate patterns, this region has formed an environment suitable for growing high-quality coffee. The dense forests and numerous species have created overall biodiversity.

Brewing Guide: The Pour-over Cupid

A pour-over cupid. Use 15g of coffee grounds, medium grind (Fuji mountain ghost tooth blade #4 grind), V60 dripper, water temperature 88-89°C. First pour 30g of water and let it bloom for 27 seconds. Pour to 105g and stop pouring, wait until the water level in the coffee bed drops to halfway, then pour again slowly until reaching 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

Traditional Cultivation Methods

About 50 coffee farmers here form a small cooperative, all using traditional Boquete methods to produce coffee—letting coffee grow in a near-natural environment. Although production is not high, it maintains a rich ecological environment, and soil quality can be maintained or even improved. Natural cultivation methods not only benefit the environment, but because coffee cherries grow slowly, they are more likely to develop high-quality coffee beans with excellent flavor. Farmers manually harvest whole coffee cherries and send them to the nearby Cafe de Eleta S.A. for post-processing. The processing plant is about 4 kilometers from the farm and includes a modern laboratory for cupping quality control and manual sorting.

Tasting Notes

During each harvest season, coffee farmers use the refined washed method and sun-drying process, allowing the green coffee beans to be full and with pure flavor.
