Brazil HiU Micro Lot

The HiU program is a plan to improve coffee quality in Central and South America, proposed by Mr. Graciano Cruz, a Panamanian honey processing expert. The program focuses on performing natural or honey processing on micro lots, with only those achieving cupping scores above 85 receiving the HiU seal, creating a win-win situation for estate owners and processors.

Brazil offers a wide variety of coffees, but its industrial policy focuses on quantity and affordability, making exceptionally premium coffees relatively rare. However, Brazilian coffee serves as an excellent choice for blending with other coffees.

Brazilian coffee features lower acidity, complemented by the coffee's sweet and bitter notes, creating an exceptionally smooth mouthfeel with subtle grassy aromatics. It has a light fragrance with a hint of bitterness, yet remains smooth and pleasant, leaving a refreshing aftertaste. While Brazilian coffee may not have particularly outstanding advantages, it also lacks significant flaws. This mild, smooth flavor profile with low acidity, moderate body, and subtle sweetness combines all these gentle notes, challenging the palate to distinguish each individual characteristic.

In some estates within the Cerrado region of Minas Gerais state in southeastern Brazil, ancient Bourbon and Yellow Catuai varieties are cultivated. Although originating from the same region, these coffees each possess distinct characteristics. Despite this diversity, Brazilian coffee suits popular tastes. As the largest coffee-producing region, various grades and types of coffee from Brazil account for one-third of global consumption, holding a significant position in the international coffee trading market. Although Brazil faces natural disasters several times more frequently than other regions, its vast plantable area more than compensates.

Minas Gerais Primavera Estate Yellow Catuai [Washed Processing] - Flavor: Orange, peanuts, genmaicha tea, nuts, caramel aftertaste, with the sweet-tart sensation of fresh orange juice and a smooth texture, typical of natural-processed Brazilian coffee.

Yellow Catuai is a hybrid of Mundo Novo and Caturra, first cultivated in 1949 by Brazil's Instituto Agronômico de Campinas (IAC). Like Red Catuai, Yellow Catuai possesses excellent disease resistance and is suitable for cultivation at high altitudes.

Pour-over brewing for Brazil Primavera Estate: Use 15g of coffee grounds, medium grind (Fuji mountain mill with ghost tooth burrs #4), V60 dripper, water temperature 88-89°C. First pour 30g of water for a 27-second bloom, then pour to 105g and pause. Wait until the water level drops to halfway before continuing the pour, slowly pouring until reaching 225g total. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.
