The Origins of Panama Coffee

Panama coffee originated in 1780 when European immigrants introduced the first batch of Tipica varieties. Located in Central America, it possesses natural advantages of sunshine, land, and mountains, combined with an ample labor population, making this region an excellent area for cultivating and producing high-quality specialty coffee—a true paradise for nurturing coffee. In particular, the Geisha variety coffee from Panama has led the global trend of focusing on specialty coffee, successfully attracting worldwide market interest in Panama coffee.

The Boquete region is Panama's oldest and most famous coffee-producing area, located on the eastern side of Baru Volcano, with an average altitude of approximately 1,000-2,000 meters. The "Volcan Baru National Park" serves as an ecological conservation area with extremely rich biodiversity, featuring multiple microclimates. Coupled with being shrouded in mist year-round and abundant rainfall, these conditions create excellent cultivation conditions, giving Boquete coffee its unique aroma and making it the region with the highest production and best quality in Panama. During each harvest season, coffee farmers use the refined washed method and sun-drying process, resulting in full, flavorful green coffee beans.

Brewing Method

Hand-pour Cupid: 15g of coffee, medium grind (Fuji ghost tooth grinder setting 4), V60 dripper, water temperature 88-89°C. First pour 30g of water for a 27-second bloom, then pour to 105g and stop. Wait until the water level in the coffee bed drops to half before continuing to pour. Slowly pour until reaching 225g, discarding the tail end. Water-to-coffee ratio of 1:15, extraction time 2:00.

Farming Practices

Approximately 50 coffee farmers here form a small cooperative, all using traditional Boquete methods to produce coffee—letting it grow in a near-natural environment. Although production is not high, this approach maintains a rich ecological environment, with soil quality preserved or even improved. Natural cultivation methods not only benefit the environment but also, due to the slow growth of coffee cherries, more easily produce high-quality coffee beans with excellent flavor. Farmers hand-pick complete coffee cherries and send them to the nearby Cafe de Eleta S.A. for processing. The processing plant is about 4 kilometers from the farm and includes a modern laboratory for cupping quality control and manual sorting.

Tasting Notes

Clean and translucent body, with white grape and caramel aromas followed by honey notes, and a captivating high mountain black tea fragrance! High sweetness, low acidity, with a smooth mouthfeel. Drinking it is like falling in love, experiencing the sweet and sour sensations every day.
