Cupid Pour-over Recipe

15g of coffee grounds, medium grind (ground with Fuji's ghost tooth burr grinder #4), V60 dripper, water temperature at 88-89°C. First pour with 30g of water for a 27-second bloom, then pour to 105g and pause. Wait until the water level in the coffee bed drops halfway, then continue pouring slowly until reaching 225g total. Avoid the tail end. Water-to-coffee ratio is 1:15, total extraction time is 2:00.

Coffee Origins

This coffee is produced by approximately 50 local farmers who form a small cooperative, all using traditional Boquete methods to grow coffee—allowing it to grow in a near-natural environment. Although production is not high, this approach maintains a rich ecological environment, preserves soil quality, and can even improve it. Natural cultivation methods not only benefit the environment but also allow coffee cherries to grow slowly, resulting in higher quality coffee beans with exceptional flavor. Farmers hand-pick the complete coffee cherries and send them to the nearby Cafe de Eleta S.A. for post-harvest processing. The processing plant is located about 4 kilometers from the farms and includes a modern laboratory for cupping quality control and manual selection.

Panama's Coffee Heritage

Panama's coffee history began in 1780 when European immigrants introduced the first Typica varieties. Located in Central America with natural advantages including sunshine, fertile land, and high mountains, plus an adequate labor force, this region has become an excellent area for cultivating high-quality specialty coffee—a true paradise for coffee cultivation. Particularly, Geisha variety coffee from Panama has driven the global trend of specialty coffee, successfully attracting worldwide market interest in Panamanian coffee.

The Boquete region is Panama's oldest and most famous coffee-producing area, located on the eastern side of Volcan Baru. It is a plateau with an average altitude of 1,000-2,000 meters. The "Volcan Baru National Park" serves as an ecological conservation area with exceptionally rich biodiversity and multiple microclimates. Coupled with year-round mist and abundant rainfall, these conditions create excellent cultivation environments, giving Boquete coffee its unique aroma. It is Panama's largest coffee-producing region with the highest quality coffee. During each harvest season, coffee farmers use the refined washed processing method and sun-drying to ensure the coffee beans are full and have pure flavors.

Volcan Baru is not only Panama's highest mountain range; the sediment from early volcanic activity and eruptions has brought large amounts of extremely fertile soil. This soil is rich in nutrients, particularly phosphorus and sulfur from volcanic ash. When mixed with clay and combined with unique climate patterns, this creates an environment suitable for growing high-quality coffee.
