Guatemala has a high average altitude, which means coffee trees grow in environments with significant temperature differences between day and night. This harsh environment with large temperature variations causes coffee cherries to mature more slowly on the trees, resulting in hard beans with more complete and rich flavors.

Wine-Aroma Natural Guatemala Pour-Over

15g coffee, medium grind (using Fuji's ghost tooth blade grinder #4), V60 dripper, water temperature 88-89°C. First pour: 30g water, 27-second bloom. Continue pouring to 105g, then pause. Wait until the water level drops halfway, then slowly pour until reaching 225g. Avoid the tail section. Water-to-coffee ratio: 1:15. Total extraction time: 2:00.

The characteristics of this region include fertile volcanic soil, lower humidity, abundant sunshine, and cool nights. This valley is surrounded by three volcanoes: Agua, Fuego, and Acatenango. Volcanic ash from eruptions enriches the soil with minerals in the Antigua region. Volcanic pumice retains moisture, overcoming the disadvantage of low rainfall in the Antigua region. Dense tree shade provides protection against occasional frost damage.
