However, the Cerrado plateau in western Minas and southern Minas Gerais, with elevations mostly above 1,100 meters, features rich topography, distinct wet and dry seasons, significant day-night temperature differences, and abundant microclimates. These conditions are ideal for cultivating elegant Bourbon and Yellow Bourbon varieties, naturally making it Brazil's main specialty coffee-producing region. Additionally, Mogiana in northeastern São Paulo province also focuses on shade-grown Bourbon, ranking alongside Cerrado and southern Minas Gerais as Brazil's three major specialty coffee regions.

Brazil's terrain is relatively flat, with coffee farms mostly situated at elevations between 600-1000 meters. The monotonous topography lacks microclimates, and farmers traditionally use non-shade cultivation methods. As a result, Brazil has developed its unique soft bean character—low acidity, prominent nutty flavors, chocolate sweetness, excellent body, though with slight woody and earthy notes, while floral and citrus aromas are not distinctly pronounced.
