Sidamo coffee offers incredibly diverse flavor profiles. Different soil compositions, regional microclimates, and countless indigenous coffee varieties create distinct differences and characteristics in coffee produced from each town area. The Sidamo production region is located in southern Ethiopia. Agriculture dominates the local economy, with coffee growing areas situated around the Great Rift Valley.
Shakisso Area Introduction
Shakisso is located in the Guji zone of Sidamo, in the southern part of the Oromia region, bordering Sidama and Gedeo. This area contains numerous mining pits that were originally excavated for gold mining, leaving many holes throughout the coffee growing areas. This makes walking between coffee plantations extremely dangerous. Shakisso stands as a unique producing area within Guji/Sidamo, representing a remote region far from most coffee-producing areas even within Sidamo. Gold mining represents another famous local product. Factors including miners, land disputes, and ethnic tensions created instability in the region during 2006. Consequently, this area now faces its greatest challenge: the need for manpower to maintain growing areas and harvest coffee.
Local smallholder farmers began cultivating organic coffee here in 2001, working closely with medium-sized coffee producers who understand how to grow forest coffee in highland regions. This represents one of the most distinctive micro-regions within Sidamo, possessing considerable uniqueness. Coffee from this area consistently captures market attention, with Ninety Plus's legendary bean (nekisse) deriving its meaning from "Nectar from Shakisso" - both its origin and name come from Shakisso.

"Ethiopian Sidamo" represents a single-origin type of Arabica coffee grown in Ethiopia's Sidamo province. Like most African coffees, Ethiopian Sidamo is characterized by small grayish beans, but its distinctive features include rich, spicy, wine-like or chocolate flavors and floral notes. The most characteristic flavors found in all Sidamo coffees are lemon and citrus with bright, crisp acidity. Sidamo coffees include Yirgachefe and Guji coffees, both of which demonstrate excellent quality.
Washed processed coffees tend to have less wild flavor characteristics, possessing pure and refreshing qualities suitable for City to Full City roast levels. Some exceptional Ethiopian washed coffees may reveal distinct notes of lifted lemon, citrus essential oils, jasmine floral notes, and honey flavors, with more pronounced acidity and lighter body.
