Introduction to Geisha Coffee

Geisha, pronounced much like the Japanese word "geisha," is also known as Geisha coffee. It was originally grown as a windbreak in a small corner of the estate, and these plants grow taller than typical coffee varieties. The owner's son, wanting to enter Panama's annual finest coffee competition, tested every variety on the estate, and that is how Geisha got its grand debut. Since then it has competed around the world and won eleven championships in total.

Flavor Profile

Flavor Notes: Oolong tea aroma, peach fragrance, and honey sweetness create a refreshing, comfortable experience — bright yet balanced, with exceptional aromatic complexity. A caramel-like sweetness wraps around the whole aroma. On the tongue you find distinct fruit acidity that turns gentle and rounded in the mouth. The fruit sweetness and aftertaste are intense, like drinking fresh fruit tea — clear and deeply satisfying. As the cup cools, the acidity grows more refined. The elegance lingers remarkably long, leaving you thoroughly satisfied.

The History of Geisha Coffee

The Geisha variety was discovered in 1931 in the Geisha forest of Ethiopia and sent to the Coffee Research Institute in Kenya. In 1936 it was introduced to Uganda and Tanzania, and in 1953 to Costa Rica. For many years Geisha went largely unnoticed until Don Pachi brought it from the small town of GESHA in southwestern Ethiopia to Costa Rica. From there Geisha traveled south to Panama, where Hacienda La Esmeralda separated it from other varieties and rode it to victory in the national coffee championship.

Geisha has rich sweetness, an exceptionally clean cup, and abundant aromas running from berries and citrus to mango, papaya, and peach. A distinctive bergamot-like aftertaste is another of its classic cupping marks. To this day, Geisha remains the champion among coffee varieties.

Panama's Coffee Excellence

Panama is one of the most important places on the world coffee map. Each year, beans from its auctions command prices above hundreds of dollars per pound.

Panama Coffee Auctions

What exactly are the Panama coffee auctions? In 1996, during the lowest period of international coffee prices, seven coffee estates in the Boquete and Volcan regions saw the dawn of the specialty era. They organized and founded the Panamanian Association of Special Coffees of Panama (SCAP). In 2013, the highest bid for washed Geisha at the Best of Panama (BOP) auction topped $160 per pound, while the natural Geisha category went to a natural Geisha from Hacienda La Esmeralda at over $350 per pound.

La Esmeralda's Geisha Classifications

Hacienda La Esmeralda's Geisha coffees are classified into three labels based on altitude:

Auction Geisha (ESMERALDA SPECIAL) - Red Label: Selected from elevations above 1550 meters.

Boquete Geisha - Green Label: Selected from 1500 meters elevation.

ESMERALDA 1,500 - Blue Label: Selected from Geisha varieties around 1500 meters elevation.

FrontStreet Coffee Recommendation

The Blue Label above is Hacienda La Esmeralda's approachable entry into Geisha, and FrontStreet Coffee carries the same estate's higher tiers. The Red Label, officially Esmeralda Special, is grown on single plots between 1600-1800 meters, cupped above 90 points, and sold in individually numbered lots so you can pick the micro-flavor you prefer. The Green Label, or Private Collection, blends several plots to show the estate's signature high-altitude Geisha character at a friendlier price, making it excellent value.

If you want to taste the "Geisha flavor" people talk about without starting at the top, FrontStreet Coffee's Boquete Geisha is the entry-level estate coffee to try: grown at 1600 meters on fertile volcanic ash soil, it brings the orange-honey character of a classic high-quality Panama Geisha, with oolong-tea body, fine fruit acidity, and clear layering. And for something that goes beyond pour-over, FrontStreet Coffee's Glana Gesha from Ethiopia — a single-variety estate coffee from the Genlana area where Kochere and Gedeb meet — is hand-picked whole-ripe, dried on raised beds for 14-20 days, and roasted medium-light to show bright citrus acidity, elegant ginger-flower aroma, ripe-fruit sweetness, and a refined finish.

Geisha's dense beans tend to sink and clog the dripper, so FrontStreet Coffee grinds to roughly 78% pass-through on a China-standard #20 sieve — about fine-sugar size — and brews at 91°C with 15g in a small Hario V60 at a 1:16 ratio, in three stages: 30g bloomed for 30 seconds, a thin circling pour to 125g, a pause until the bed drops halfway, then on to 225g, for a total of about 2:10-2:20.
