This coffee is named after Aromanis to signify its cotton candy-like mouthfeel. However, the coffee beans come from Ciwidey Garut in West Java. Actually, no special coffee seeds are used, but rather natural drying methods are applied.
Aromanis Honey Process Coffee Beans

Aromanis, meaning "sweet mango," is a traditional Indonesian confection made from flour and sugar. This coffee is named Aromanis to represent its cotton-like texture. However, the coffee beans originate from Ciwidey, Garut in West Java. While no special coffee varieties are used, beans processed through the natural sun-drying method can achieve this distinctive flavor profile, though such flavors are not widely accepted in West Java, Indonesia.

Coffee beans are harvested from branches and separated from the fruit, then rinsed and dried. The beans are turned every hour to ensure even drying, including at midnight. "Nighttime drying is extremely important due to high humidity," explains Arief, the coffee processor (August 5, 2014).

The entire processing takes 25-26 days! It's no surprise that Aromanis coffee beans are slightly more expensive than regular beans. The Coffee Farmer Cooperative sells Aromanis raw coffee beans for 130,000-150,000 rupiah per kilogram, while FrontStreet Coffee offers them at retail for 80,000 rupiah per 200-gram pack.

West Java Province is a first-level administrative region in Indonesia, located in the western part of Java Island. Honey Processing

Honey processing, also known as Honey Process or Miel Process, produces what's called Honey Coffee. This method is adopted by coffee plantations in Costa Rica, Panama, Guatemala, and other regions. Honey processing refers to the production process of drying coffee beans with their mucilage intact. After removing the outer pulp from coffee beans, a layer of sticky gelatinous substance remains. Traditional washed processing would use water to wash this away, but due to water resource limitations in some high-altitude areas, this direct drying method was developed.

Honey processing is a relatively complex, time-consuming, and challenging processing method. The first step involves selecting high-quality fruits, then removing the pulp while retaining the parchment—this parchment is the core of honey processing. The parchment contains rich sugars and acids that slowly penetrate the coffee beans during the drying process. The second step is drying, which is also the most crucial condition for producing high-quality coffee beans.

Honey processing allows coffee to retain the cleanliness of washed processing. Although the brightness decreases somewhat, it increases sweetness and caramel notes. Depending on the degree of honey processing, honey-processed coffees are divided into yellow honey, red honey, and black honey processing. The advantage of honey processing lies in its ability to best preserve the original sweet flavors of ripe coffee fruits, presenting the coffee with delicate brown sugar flavors and nut sweetness, while berry flavors support red wine-toned aromas, considered a very elegant product.
