El Salvador is one of the smaller countries in Central America. The coffee from this region is light-bodied, aromatic, pure, and slightly acidic, with the distinctive characteristic of excellent balance, making it a specialty of Central America. It features equal characteristics of acidity, bitterness, and sweetness.
El Salvador coffee ranks alongside Mexico and Guatemala as major producers in the region, competing for the top one or two positions in Central America. Coffee from highland areas produces large, uniformly sized coffee beans with a rich, mild flavor. Like Guatemala and Costa Rica, Salvadoran coffee is graded by altitude, with higher altitudes producing better coffee. It is divided into three grades by elevation: SHB (Strictly High Grown) = highland, HEC (High Grown Central) = mid-highland, CS (Central Standard) = lowland; the best brand is Pipil, which is the Aztec-Mayan name for coffee. It has been certified by the Organic Certified Institute of America.
The flavor profile includes wheatgrass, roasted nuts, malt sugar, smoothness of milk cream, rounded acidity, and sweetness of brown sugar and hazelnut chocolate.

Yellow Bourbon, when ripe, produces yellow fruits. It was first discovered in Brazil and currently grows mainly in Brazil. It is generally believed to be a mutation resulting from hybridization between red-fruited Bourbon and a Typica variety called "Amerelo de Botocatu" that produces yellow fruits. Yellow Bourbon is one of the most outstanding quality varieties. Regular Bourbon changes from green to yellow to red, but Yellow Bourbon only maintains its yellow appearance. Yellow Bourbon grown at high altitudes and processed using natural sun-drying methods has exceptional flavor.
