High-altitude coffees yield uniformly large beans with rich, mellow flavors. Like Guatemala and Costa Rica, El Salvador's coffee is graded by altitude—the higher the elevation, the superior the coffee quality.

El Salvador ranks alongside Mexico and Guatemala as a major coffee-producing nation in Central America, competing with other countries for the top positions in the region. High-altitude coffees from El Salvador produce uniformly large beans with rich, mild flavor profiles. Like Guatemala and Costa Rica, Salvadoran coffee is graded by altitude—the higher the elevation, the better the coffee—divided into three grades: SHB (Strictly High Grown) for highland, HEC (High Grown Central) for mid-highland, and CS (Central Standard) for lowland. The finest brand is Pipil, the Aztec-Mayan name for coffee, which has received certification from the Organic Certified Institute of America.

The flavor profile features notes of wheatgrass, roasted nuts, maltose, and a smooth milk creaminess, with well-rounded acidity and sweet notes of brown sugar and hazelnut chocolate.

El Salvador is one of the smaller countries in Central America, producing coffee that is light-bodied, aromatic, pure, and slightly acidic, with exceptionally balanced flavor characteristics that make it a Central American specialty. It exhibits equal proportions of acidity, bitterness, and sweetness.

Yellow Bourbon, a variety that ripens to yellow fruit, was first discovered in Brazil and remains primarily cultivated there today. It is believed to have originated from a hybrid mutation between red-fruited Bourbon and a yellow-fruited Typica variety called "Amerelo de Botocatu." Yellow Bourbon is considered one of the most exceptional varieties—while typical Bourbon cherries transition from green to yellow to red, Yellow Bourbon remains at the yellow stage. When grown at high altitudes and natural-processed, Yellow Bourbon produces outstanding flavors.

Santa Ana Volcano (Volcán Santa Ana in Spanish) lies in southwestern El Salvador, in Santa Ana Department, standing as the country's highest peak at 2,381 meters (7,749 feet). The estate serves as a model coffee-producing farm in El Salvador.
