About Project Origin
Sasa Sestic, the 2015 World Barista Champion, launched a green bean sourcing project called Project Origin three years ago with his business team at ONA Coffee. This project works directly with coffee farming families in impoverished countries and regions, improving their production conditions and offering them purchase prices that are 20% higher than fair trade prices.
The project's original mission also includes strengthening the connection between roasters and coffee farmers, while guiding farmers to cultivate high-quality coffee beans. To date, Sasa has established relationships with coffee growers from eight countries, including Brazil, Panama, India, Ethiopia, El Salvador, and Costa Rica.

This batch of Yirgacheffe was produced at the Kebel Aricha processing station, where approximately 650-700 small-scale coffee farmers from nearby areas deliver their ripe coffee cherries for processing in exchange for cash.
The happy coffee farmers first harvest the coffee cherries from the trees, then pour them into water-filled pools. Due to varying ripeness levels, the density of the coffee cherries differs. Overripe and underripe cherries, along with some leaves and twigs, float to the surface, while fully ripe cherries sink to the bottom. This natural method effectively filters out cherries that pass the first screening stage.
The selected ripe coffee cherries then enter a depulping machine to remove the skin and pulp.
Next, the coffee beans with remaining mucilage undergo fermentation (interacting with microorganisms in water or air). After fermentation is complete, the beans with their parchment layer enter washing channels to be thoroughly cleaned. Following this thorough washing comes the drying stage, where the moisture content of the green coffee beans is maintained at around 12%. The beans are then packed into jute bags and left to rest for about 2-3 months, allowing the green beans to stabilize in quality. Finally, the parchment layer is removed, and they're ready for sale!
