The "DUNCAN" estate produces unique coffee using "Premium Picking" and "Reserva Picking" methods. This approach pushes coffee quality to exceptional levels with remarkable flavor profiles, though it significantly reduces coffee yield. KOTOWA's key principle for "Premium Picking" is that coffee cherries must be harvested only when they display a deep wine-red color (Overripe Dark Color), followed by immediate and rapid post-harvest processing! The cost of achieving this flavor profile is enormous. Another method called "Reserva Picking" is also known as "Quickly Processed" picking.
"Reserva Picking" doesn't rely solely on color as the picking standard—it must also assess sweetness and the quality of fruit pulp sweetness! In addition to being 100% fully red, cherries must also be 100% fruit-sweet before picking, and they must exhibit a velvety sweetness to qualify for harvest!

Situated in the Baru volcanic region, this area enjoys a privileged microclimate and volcanic terrain. The growing season features abundant rainfall with distinct wet and dry seasons. Combined with volcanic lava flows, the fertile volcanic black soil and excellent drainage provide exceptional growing conditions, producing coffee with particularly captivating aromas. The altitude here exceeds 1700 meters, with strong winds, and the estate contains numerous giant coniferous trees, some over 200 years old.
Kotowa places great importance on ecological preservation, completely avoiding chemical fertilizers. Instead, they use cherry skins and pulp to create nutrient-rich compost for nourishing coffee trees and giving back to the land. Not only was Kotowa Coffee nominated by Panama's environmental agency for the National Environmental Protection Award in 2006, but this approach also contributes to the unique flavor profile of Duncan Estate coffee, resulting in exceptional coffee bean quality that consistently achieves top rankings in the Best of Panama (BOP).
