Combined with lava flows from the volcanic belt, the fertile volcanic black soil and excellent drainage create exceptional growing conditions. The coffee produced here has particularly captivating aromas. The altitude exceeds 1700 meters with strong winds, and the plantation contains many giant coniferous trees over 200 years old.
Kotowa places great importance on ecological preservation, completely avoiding any chemical fertilizers. Instead, they use cherry skins and pulp to create nutrient-rich compost that nourishes the coffee trees and gives back to the land. Not only was Kotowa Coffee nominated by Panama's environmental agency for the National Environmental Protection Award in 2006, but this approach has also created the unique flavor profile of Dunken Estate coffee, producing exceptional quality beans that consistently achieve top rankings in the BOP.

Harvesting Excellence
The Dunken Estate developed unique harvesting methods: 'Premium Picking' and 'Reserva Picking.' These approaches elevate coffee to exceptional quality and flavor, though significantly reducing production volume. KOTOWA's 'Premium Picking' focuses on harvesting coffee cherries only when they display a wine-red color (overripe dark color), followed by immediate and rapid post-harvest processing! The cost of achieving this flavor is enormous.
The 'Reserva Picking' method, also called fully red picking (Quickly Processed), doesn't rely solely on color as the harvesting standard. It requires judging sweetness and pulp quality. Not only must the cherries be 100% fully red before picking, but they must also have completely transformed to fruit sweetness before harvesting. They are only picked when they exhibit a velvet-like sweetness!
