Kotowa also places great importance on ecological protection, completely avoiding any chemical fertilizers. Instead, it uses cherry skins and pulp to create high-nutrient compost to nourish coffee trees and give back to the land. This approach not only earned Kotowa Coffee a nomination from Panama's environmental agency for the National Environmental Protection Award in 2006 but also contributes to the unique flavor character of Dunken Estate, consistently achieving top rankings in the BOP.

The "DUNCAN" estate developed unique "Premium Picking" and "Reserva Picking" methods, which pushed coffee quality and flavor to exceptional heights while significantly reducing production volume. The key to KOTOWA's "Premium Picking" method is that coffee cherries must reach a wine-red color (overripe dark color) before harvesting, followed by "immediate" and "rapid" post-harvest processing! The cost of achieving this flavor is enormous. Another method, "Reserva Picking," is also known as fully ripe picking (Quickly Processed).

"Reserva Picking" doesn't rely solely on color as the harvesting standard—it must also assess sweetness and the quality of fruit pulp sweetness! In addition to being 100% fully red, the cherries must be 100% transformed into fruit sweetness before picking, and are only harvested when they taste like velvet-like sweetness!
