Situated in the Baru volcanic region, Duncan Estate enjoys a unique microclimate and volcanic terrain with abundant rainfall during the growing season and distinct wet and dry periods. Combined with lava flows from the volcanic zone, the fertile volcanic black soil and excellent drainage provide exceptional growing conditions, resulting in particularly captivating coffee aromas. The altitude here exceeds 1700 meters with strong winds, and the estate features numerous giant coniferous trees, some over 200 years old.

Harvesting Methods

Duncan Estate has developed unique 'Premium Picking' and 'Reserva Picking' methods that represent a significant leap forward in coffee quality and flavor, though they substantially reduce coffee production volume. The key to KOTOWA's 'Premium Picking' method is that coffee cherries are harvested only when they display a wine-red color (overripe dark color), and must be processed "immediately" and "quickly" after picking! The cost of achieving this flavor is extremely high. Additionally, there is the 'Reserva Picking' method, also known as the fully-red picking method (Quickly Processed).

The 'Reserva Picking' method doesn't rely solely on color as the picking standard—it requires judging sweetness and the quality of fruit pulp sweetness! Not only must the cherries be 100% fully red before picking, but they must also be 100% converted to fruit sweetness before harvesting, only being picked when they exhibit a velvety sweetness!
