Situated in the Baru Volcano region, it enjoys a unique microclimate and volcanic terrain. The growing season features abundant rainfall and distinct wet and dry seasons. Combined with the fertile volcanic black soil and excellent drainage from lava flows, these conditions create an exceptional growing environment, producing particularly captivating coffee aromas. The altitude here exceeds 1700 meters with strong winds, and the estate features numerous giant coniferous trees, some over 200 years old.
Kotowa places great importance on ecological preservation, completely avoiding any chemical fertilizers. Instead, they utilize cherry skins and pulp to create nutrient-rich compost that nourishes the coffee trees and gives back to the land. Not only was Kotowa Coffee nominated by Panama's environmental agency as a recipient of the National Environmental Protection Award in 2006, but this approach also contributes to the unique flavor profile of Duncan Estate coffee, producing exceptional quality beans that consistently achieve top rankings in the Best of Panama (BOP) competition.
The "Duncan" estate has developed unique harvesting methods including 'Premium Picking' and 'Reserva Picking.' These practices represent a significant leap forward in coffee quality and flavor, though they substantially reduce yield. The key to KOTOWA's 'Premium Picking' method is that coffee cherries must be harvested only when they display a wine-red color (overripe dark color), followed by "immediate" and "rapid" post-processing! The cost of achieving this flavor profile is extremely high. Another method, 'Reserva Picking,' is also referred to as fully-ripe picking (Quickly Processed).
The 'Reserva Picking' method relies not solely on color as the harvesting standard but also requires judging the sweetness and quality of the fruit pulp's sweetness! Beyond being 100% fully red, the cherries must also have transformed completely into fruit sweetness before picking, and are only harvested when they exhibit a velvety sweetness!
