Situated in the Baru Volcano region, it enjoys a unique microclimate and volcanic terrain with abundant rainfall during the growing season and distinct wet and dry periods. Combined with volcanic lava flows, the fertile volcanic black soil and excellent drainage create exceptional growing conditions, resulting in particularly captivating coffee aromas. The altitude here exceeds 1700 meters with strong winds, and the estate features numerous giant coniferous trees, some over 200 years old.

Kotowa also places great importance on ecological environment, completely avoiding any chemical fertilizers and using cherry peels and pulp to create nutrient-rich compost that nourishes coffee trees and gives back to the land. Not only was Kotowa Coffee nominated by Panama's environmental agency as the winner of the Panama National Environmental Protection Award in 2006, but it has also created the unique flavor of Dunken Estate coffee, producing exceptional quality coffee beans that consistently achieve top rankings in BOP.

The 'DUNCAN' Estate has developed unique 'Premium Picking' and 'Reserva Picking' methods, which push coffee toward extremely high quality and significant flavor breakthroughs, though coffee production is greatly reduced. KOTOWA's 'Premium Picking' focuses on harvesting coffee cherries only when they呈现酒红色 (show wine-red color) - after they become overripe dark color, and processing them "immediately" and "quickly" after picking! The cost of obtaining this flavor is extremely high. Additionally, there is another 'Reserva Picking' method, also called red-ripe picking (Quickly Processed).

'Reserva Picking' is not based solely on color as the picking standard - it must judge the sweetness and quality of fruit pulp sweetness! In addition to being 100% red-ripe before picking, it must also be 100% converted to fruit sweetness before picking, only picked when it tastes velvety sweet!
