Regional Characteristics
Sidamo coffee flavors are incredibly diverse due to different soil compositions, regional microclimates, and countless native coffee varieties, resulting in distinct differences and characteristics for coffee produced in each town area. The Sidama region is located in southern Ethiopia, where agriculture dominates the industry. Coffee growing areas are situated around the Great Rift Valley. Sidamo's coffee flavors are remarkably diverse because varying soil components, regional microclimates, and numerous native coffee varieties create noticeable differences and unique characteristics in coffee produced by each town area. The Sidama region lies in southern Ethiopia, with agriculture as the primary industry. Coffee cultivation areas are located around the Great Rift Valley.

Processing Details
The Shakiso processing station is located in Buku Abel village at an altitude of 2200 meters. During the harvest and processing season (December-January), its unique growing environment and natural climate create Shakiso's distinctive flavors. We only begin natural processing when the sugar content of harvested red cherries reaches above 30. During the first two days of natural processing, we maintain the humidity of the red cherries to allow their fruit sugars to fully begin the fermentation process. Meanwhile, the high-altitude location allows the processing station's nighttime temperature to drop to around 12 degrees Celsius, preventing over-fermentation odors due to excessive heat. During midday when temperatures are higher, we provide timely shade to prevent sun damage to the red cherries.
At night, to prevent sudden rainfall, we use thick plastic covers for protection. This allows the red cherries to ferment and dehydrate at relatively low temperatures. After 18 days of natural processing, when the moisture content of the green coffee beans drops to around 13%, we stop the natural processing, pack them in jute bags, and store them in natural conditions at 12-22 degrees Celsius with 40-50% humidity for about 50 days for bean resting and further dehydration. When the green coffee beans reach a moisture content of around 10%, they are transported to the processing station for hulling, screening, and sale.
