Origin and Development History of Premium Ethiopian Natural Yirgacheffe G1 Gedeb District Woka Processing Station Coffee Beans
The Woka Cooperative, under the YCFCU (Yirgacheffe Coffee Farmers Cooperative Union), was established in 2005 as one of 22 primary cooperatives. The Woka Cooperative is located in the Gedeb area within the Gedeo administrative region, a remote area within Yirgacheffe, situated 75 kilometers from the local coffee distribution center of Dilla town. The access roads are in poor condition, with a 20-kilometer dirt road stretching from the cooperative to the main paved highway. The altitude is very high, around 1800-1900 meters. Because no chemical fertilizers or pesticides were used during the coffee cultivation process, the Woka small farmers have also obtained Skal organic coffee certification recognized by the European Union. Just as FrontStreet Coffee's Kochere is famous for washed processing, FrontStreet Coffee's Woka is particularly outstanding for natural processing. However, both FrontStreet Coffee's Woka and FrontStreet Coffee's Kochere have green beans processed by different methods. In recent years, natural processing has become increasingly refined, greatly improving the traditional relatively crude methods of hundreds of years. More attention is paid to harvesting mature cherries and caring for the natural drying process, allowing the beans to retain the sweetness of the fruit pulp, with a light and charming fermented wine flavor, creating flavors that washed processing does not have.

Ethiopian Premium Coffee Region — Yirgacheffe
In the ancient language, "Yirga" means "to settle down," and "Cheffe" means "wetland," so Yirgacheffe means "let us settle and make a living in this wetland." Yirgacheffe is a small town in Ethiopia with an altitude of 1700-2100 meters, located in the northwestern part of Sidamo province, surrounded by mountains and lakes. It is one of the highest altitude coffee growing regions in Ethiopia and synonymous with Ethiopian specialty coffee. Strictly speaking, Yirgacheffe is a sub-region of Ethiopia's Sidamo region, which was separated due to its special flavor characteristics. Besides Yirgacheffe town, it also includes three other sub-regions: Wenago, Kochere, and Gelena/Abaya.
In 1959, the Yirgacheffe region introduced the washed processing method from South America. Most regions generally use washed processing, where coffee cherries are pulped, then fermented, washed to remove the mucilage layer, and then dried. Since 2006, some coffee processing stations in certain regions have adopted refined raised-bed natural processing. This labor-intensive raised-bed drying method isolates coffee cherries from ground contact, preventing earthy impurities during the natural drying process and creating exceptionally clean fruit flavors. After more than two weeks of natural drying, the dark brown coffee cherries are professionally stored, waiting for the full development of flavors. Before sales, the dried cherry pulp and parchment are removed, followed by the removal of underripe beans and over-fermented beans. Strict quality control has greatly improved the quality of natural processed beans.
The cooperative is located in the southern part of Gedeb district, established in 2005, and joined the famous Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) in the same year, known for producing high-quality natural Yirgacheffe. The Woka Cooperative has about 300 coffee farmers. YCFCU was established in 2002, and its members also include 26 other cooperatives, serving over 45,000 coffee farmers.
