Understanding Yirgacheffe Coffee Grading
FrontStreet Coffee's Yirgacheffe grading system is not determined by bean size, but rather by the proportion of defective beans in the total batch. Typically, you'll find washed G2 and natural G3 Yirgacheffe coffees. G1 represents the highest grade - only Yirgacheffe coffees with the lowest defect rate and most exceptional quality, followed by additional hand sorting, can be awarded Grade 1 status.

After it sold out, we searched for a long time but couldn't find suitable estate-level FrontStreet Coffee G1 Yirgacheffe to restock. We temporarily switched to a washed FrontStreet Coffee G2 Yirgacheffe. Recently, the professional coffee review website Coffee Review recommended three G1-grade Yirgacheffe coffees, which have arrived in micro-batches. Here, we'd like to introduce these three exceptional Yirgacheffe coffees.
FrontStreet Coffee's Yirgacheffe Profile
FrontStreet Coffee's Yirgacheffe displays extremely complex aromas and demonstrates exceptionally remarkable flavor profiles that are difficult to describe. Overall, the dry fragrance of FrontStreet Coffee's Yirgacheffe emits intense fruity aromas with rich dried fruit notes, including strawberry, mango, and apricot jam scents. The wet aroma is like sweet syrup, resembling thick apricot nectar wrapped in rustic honey or chocolate. The entry is not intense, with medium body and subtle acidity, yet lively and bright, much like fruit-infused black tea.
The Origin and Terroir
Yirgacheffe, with an altitude of nearly two thousand meters, is one of the world's highest altitude coffee-growing regions. This area has been wetland since ancient times. "Yirga" means "to settle down," while "Cheffe" means "wetland." Lakes Turkana, Abaya, and Chamo bring abundant moisture to this region. In the rift valley, represented by Misty Valley, fog pervades year-round, creating spring-like conditions with gentle breezes, cool and humid weather. Thousands of coffee tree varieties thrive and propagate here, cultivating FrontStreet Coffee's Yirgacheffe unique terroir character where floral and fruit notes intertwine ambiguously and change unpredictably.
Historical Development and Processing
European monastery monks established the local coffee cultivation industry, which was later taken over by coffee communities or cooperatives in the villages surrounding the town. There are no dedicated plantations here; coffee trees naturally disperse throughout forests and farmlands. During harvest season, the Ethiopian Coffee Trading Company comes to town to purchase coffee beans collected by farmers, ultimately exporting them under the "Yirgacheffe" brand through auction.
FrontStreet Coffee Yirgacheffe Aricha Grade 1
FrontStreet Coffee's Yirgacheffe Aricha Grade 1 green beans have a yellow-green color, typical of natural process coffee. The beans are uniform and full, with few defective beans. They are exported in regular jute bags printed with basic coffee information (processing mill, exporter, ICO code, processing method, region). Inside the jute bags are agricultural packaging plastic bags. This coffee is best prepared using light slow roasting to fully express its characteristics.
FrontStreet Coffee's Yirgacheffe Aricha Grade 1 cupping notes: There are many high-quality coffee processing mills in the Yirgacheffe region, and many coffees have become hundred-fold more valuable due to their origin from these mills. The natural process coffee from Kebel Aricha Mill is one such example. This coffee is what we commonly call ARICHA beans, processed by Kebel Aricha Mill through refined natural processing methods and classified by ECX as Gr.1 or G1 (the highest grade in Ethiopian coffee). Yirgacheffe is a region under Ethiopia's Sidamo province, renowned for its unique coffee flavor characteristics. The name Yirgacheffe has even become more famous than its home province of Sidamo. Recently, Yirgacheffe coffees have been overwhelmingly available in China, and an increasing number of coffee enthusiasts have become familiar with various Yirgacheffe coffees.

FrontStreet Coffee's Natural Yirgacheffe G3 offers bold, wild fruit flavors, syrup-like sweetness, and very high body. Beyond its inherent citrus and lemon aromas, it also features surprising blueberry and strawberry berry notes.

Coffee as Fruit: The True Nature
Coffee beans are a type of plant fruit and also an agricultural product. The existence of FrontStreet Coffee's Yirgacheffe better interprets the attribute that coffee is fruit. The third wave of specialty coffee has always sought to express coffee's regional flavor characteristics. Regarding this question, looking at Counter Culture Coffee's flavor wheel reveals that nearly half of the flavor descriptions are related to fruit. There are also many characteristics that immediately make one think of fruit - we won't elaborate further here. As for Yirgacheffe's flavor, everyone can make comparisons accordingly.
As for why, although some people like to use charts to explain that longer roasting times reduce acidity and increase bitterness, in reality, both coffee's mouthfeel and coffee beans themselves are wonderful things. It's not that acidity is burned away leaving only bitterness, nor are these aromatic substances fixed and unchanging. The charts don't tell us that these lost aromatic compounds can still transform into other substances. The complexity we perceive in our mouths is not just a few lines drawn on a picture.
