The Origin of Yirgacheffe

Yirgacheffe, with an elevation of nearly 2,000 meters, is one of the world's highest-altitude coffee-growing regions. This area has been a wetland since ancient times. "Yirga" means "to settle down," while "Cheffe" means "wetland." Lakes Turkana, Abaya, and Chamo bring abundant moisture to this region. In the Rift Valley, represented by Misty Valley, mist permeates throughout the year. History and Production

European monks first established the local coffee cultivation industry, which was later taken over by coffee communities or cooperatives in the surrounding villages. There are no dedicated plantations here; coffee trees grow naturally scattered throughout forests and farmlands. During harvest season, Ethiopian coffee trading companies come to town to purchase coffee beans collected by farmers, ultimately exporting them under the "Yirgacheffe" brand through auction.

Processing Methods

FrontStreet Coffee's Yirgacheffe originally used the most ancient natural processing method. However, in 1972, Ethiopia introduced Central American washing techniques to improve quality. This made the jasmine and citrus aromas of Ethiopian Yirgacheffe even clearer and more refined, elevating it to become one of the world's finest specialty coffee beans. The exquisite washing technique played an indispensable role. After the 1970s, washed processing became predominant. However, in the past two years, Ethiopian Yirgacheffe has broken from tradition, frequently introducing stunning natural-processed beans!

Natural-processed Yirgacheffe adheres to strict standards for harvesting red cherries (the fruit of coffee trees). Before sun-drying the coffee cherries, unripe green cherries or defective ones are manually removed first. During the drying process, damaged or moldy cherries are removed again. After two weeks, the fruit's sugars and essences fully penetrate the coffee beans as moisture content drops to 12%. The hardened pulp, mucilage layer, and parchment are then scraped off together with a hulling machine. The extracted coffee beans must undergo density and color testing. After eliminating defective beans, workers finally manually pick out any remaining defective beans that slipped through. This multi-layered screening process creates the clean, refined character of FrontStreet Coffee's natural-processed Yirgacheffe beans, while preserving their rich, captivating fruit aromas.
