About Yellow Bourbon
The Bourbon variety originated from Bourbon Island in the Indian Ocean (now known as Réunion Island) and is a sub-variety resulting from a mutation of Typica. Like Typica, it belongs to the oldest existing coffee varieties. When green fruits ripen, they turn bright red, while Yellow Bourbon is a hybrid of Bourbon with other varieties. Due to its lower yield and relatively poor resistance to wind and rain, it has not been widely cultivated.
However, when grown at high altitudes, it exhibits excellent flavor characteristics. In recent years, the Pulped Natural processing method has become more common.
