Among Brazil's many coffee varieties, Yellow Bourbon stands out as one of the most exceptional cultivars. While typical Bourbon beans turn from green to yellow before reddening, Yellow Bourbon keeps its distinctive yellow appearance throughout development. Grown at high altitudes and processed by natural drying, Yellow Bourbon develops an exceptionally outstanding flavor.

Bourbon beans are almost uniformly round and slightly smaller than Typica beans. Though they mature later, their yield exceeds Typica by approximately 30%. Bourbon thrives when cultivated above 1,200 meters, where its flavor becomes significantly more distinctive than that of beans grown below 1,000 meters. Bourbon has one notable drawback, however: after a productive fruiting year, the trees need a resting year before producing again. Round Bourbon varieties grow vigorously and resist leaf rust better than Typica, while maintaining a flavor quality that rivals or even exceeds it.

In 1810, some round beans from Bourbon Island underwent a mutation, producing the famous "Pointy Bourbon" variety. This variety has a caffeine content only half that of others, coupled with a low yield and a weak plant constitution. Its extreme rarity has led some to describe it as a delicate aristocratic youth...

Arabica coffee beans now represent the exclusive domain of specialty coffee. All the varieties mentioned by the original questioner belong to the Arabica category. This includes the ancient Typica and its Bourbon variants, with red, yellow, and green Bourbons representing further mutations of the Bourbon variety. Other varieties such as Caturra, Geisha, S28, S32, and Pacamara were developed later through hybridization between Typica and early Bourbon varieties or with Robusta species, aiming to increase yield, enhance flavor, and improve disease resistance. This is because Arabica cultivation is significantly more challenging than Robusta.
