FrontStreet Coffee's Yirgacheffe performs exceptionally well in both light and medium-dark roasts: If you prefer distinctive citrus and fruit aromas with a light, gentle mouthfeel, choose the light-roasted FrontStreet Coffee Yirgacheffe, which is removed at the end of the first crack. If you value flavor richness, body, viscosity, and aftertaste, opt for the Vienna-roasted Yirgacheffe with light surface oil, removed during the middle to late stages of the second crack.
Because FrontStreet Coffee's Yirgacheffe is washed-processed with relatively high moisture content, ensure adequate dehydration time; avoid prolonged roasting to prevent the loss of delicate aromatic compounds under extended high temperatures. Small-batch roasting over low heat for 15-20 minutes is ideal for medium-dark roasted FrontStreet Coffee Yirgacheffe. Roast over low heat for 17 minutes (230°C), then turn off the heat and coast for 30 seconds before immediately cooling and removing the silver skin. The coffee beans should show slight surface oil and appear dark brown.
The beans are very light, offering minimal resistance when using a hand grinder, and don't feed easily into the grinder. The dry grounds have rich caramel notes with subtle African earthy undertones. The wet aroma after brewing reveals excellent caramel characteristics, with the deeper roasting completely eliminating the signature citrus notes typical of the region. However, upon sipping, the coffee is rich, aromatic, and delightfully complex. The gentle acidity, bitterness, and astringency are all well-balanced, creating a heavy body with better viscosity than light roasts and a long, lingering aftertaste.
